Am just watching an old Masterchef episode and one of the contestants is doing Greek food that I’ve never heard of.
It also got me thinking about when a friend cooked me something called pinacculty (if that’s how it’s spelled)?

Staffordshire oatcakes Lobby
Staffordshire oatcakes!!! Hell yeah! I always thought that oatcakes were biscuits that taste like cork coasters until I stayed at the splendid 'Dog and Doublet' Inn in Staffordshire. Oh , how I was wrong! They were the finest of pancakes (and healthy too but for my cheese and bacon additions) and I miss them muchly. I've tried to recreate them but have failed miserably. Food of the Gods.

I love Redcar 😊 you can smell the parmos when you get off the train 😁

Confit de canard Foie gras Tortu(e) just like Staffordshire oatcakes Tourte fromagère (like à cheesecake, with curd cheese and blackened but not burnt top) Cabecou - disc of rinded goat cheese Clafoutis Walnuts 'flat' peaches and nectarines Stuffed duck necks Duck/chicken gizzards (lovely and tender when they've been stewed in duck fat)

Stottie in general - buttered stottie dipped in soup or stew is pure stodgy comfort.

Ah the memories of the 6 months I spent working in Teeside! Discovering the never before (or since) heard of sandwich fillings such as ham and pease pudding or cheese savoury was an unexpected bonus.

However, I feel I must mention another local delicacy as the true highlight of my secondment..... PARMO 🤪

@TheGoatIsHere lardy cake is amazing.
However Bacon Pudding is my number 1. Suet pastry rolled out and layered with onion, bacon and sage. Rolled up like a Roly Poly and boiled in a muslin for a couple of hours. Served with loads of creamy onion sauce.

There is a cheesemaker nearby who makes some local cheeses that I love - Waterloo, Wigmore, Spenwood and Barkham Blue.

Don't know if that counts as a local speciality but they're from here and they're delicious!!

Nothing regional is 'lesser known' where I come from anymore.

Does England really do regional dishes? sure a few types of cake or sausage (usually widely available) but its hardly France/Italy
