Yesterday I was very grateful to my past self as I'd frozen some left over chilli, and I hadn't got round to organising dinner, so I just thawed it quickly and reheated it on the hob.

I'm usually fairly organised about food, just grab meat out of freezer each eve to have with veg (frozen if I'm feeling lazy) or salad. I always make extra if I'm doing stew/curry or similar, then pack up leftovers for the freezer. Makes life easy and cheaper.

I spent an hour or so pottering in the kitchen making tonight's dinner. It was a sort of amalgamation of aubergine parmigiana and lasagne. Essentially, it was a lasagne made using slices of aubergine instead of pasta sheets. I'm no/low-carbing at the moment as I have crohns and bread/pasta/potatoes aren't great.

I served it with a huge bowl of salad (pea shoots, baby spinach, lettuce, avocado and coriander) and everyone liked it and cleared their plates - even the child who had moaned about having aubergines when I was cooking it!

I'm having a great time trying out new recipes at the moment and there hasn't been one I haven't enjoyed yet. The kids aren't as keen on some of them but at least they give them a go.

Tomorrow I'm making sweet potato and chorizo soup with chilli flakes and fresh coriander to serve. The rest of the family can have it with cheesy garlic flat bread and I'll just try and ignore them LOL.

One of the family's all time faves is kedgeree. It's relatively quick to make and there are never any leftovers! There are lots of recipes online for it but my favourite is the Hairy Biker's version (except I poach my haddock in milk and then use that to cook the rice. Makes it nice and creamy without having to add extra cream.

This thread is strangely comforting. Lots of good ideas. Tonight was filled pasta with home made tomato sauce, last night was mushroom risotto. I often get lost for inspiration so this is handy!

Tonight I made roasted pork, served with roasted red onions, sweet potato mash, tender stem broccoli and cauliflower baked with cardamom, garam masala, garlic and olive oil.

Pudding was baked apples with some sweet mincemeat stuffed in the core, and some left over home made ice cream.

Tbsp olive oil
Red pepper, cut into quarter pieces
Red onion, finely chopped
Clove of garlic, crushed
50g chorizo sausage, diced
150g risotto rice
50ml white wine
½ tsp smoked paprika
½ tsp dried chilli flakes (opt)
200g (one small tin) chopped tomatoes
Tbsp balsamic vinegar
250ml veg or chicken stock
30g Parmesan, finely grated

Firstly, roast your pepper. I find the easiest way to do this is to put the four pieces, skin side up, on a baking tray and stick them under a hot grill for 10-20 mins until the skin is blackened. Transfer the pepper into a plastic bag and cool. The skin will then slip off easily. Dice the flesh of the pepper.

In an ovenproof dish, warm the olive oil and add the chorizo. Cook for a while: the chorizo itself will release more oil as it heats up. Tip in the onion and the pepper, cook for several minutes until softening, then add the garlic and spices and cook for a minute or so more until the “raw” garlic smell is no longer present (I find adding the onion and garlic at the same time, as many recipes suggest, just causes the garlic to burn).

Now stir in your risotto rice, and make sure it is coated in the lovely, orangey oil. Then add the wine and allow to bubble down to almost nothing. Pour over the stock, tomatoes and add a good lug of balsamic vinegar for sweetness, cover the dish and transfer to a preheated oven (200 or 180 fan) for 25 minutes.

Stir through the Parmesan cheese before serving.[/quote]
