To ask what to serve at a bbq

Posting for traffic:

Hosting my first bbq on Sunday, I need to go out tomorrow and get all the food. Can anyone help me with recipes or items that are must haves. Thanks Grin

Burgers, sausages, kebabs, mixed veg parcels, a couple of different salads, coleslaw. That's my go to bbq list. Sometimes some chicken drumsticks.

Ps cook any chicken/sausages in the oven first then just heat it on the bbq!

Break it down..

Meat for the bbq...sausages, burgers, kebabs, chicken, steak

Burger buns and hot dog buns

Any veggies coming? If so, veggie sausages, burgers, halloumi kebabs

Then sides...I'd go potato salad, coleslaw, green salad, crisps and dip

Pork belly crisps up nicely on the BBQ. Halloumi is also nice. Chicken, jacket potatoes, coleslaw, lots of nice salads, flatbread. Enjoy!

Sausages, burgers, chicken, kebabs, halloumi, plastic cheese (for burgers) sauces ie ketchup, potato salad, coleslaw, buns for the sausages etc, salad, onion

Why not try and do something different from the boring ubiquitous sausages and burgers?

It obviously depends on how many you're catering for, but you could do something like a marinated butterflied leg of lamb, marinated in harissa and Moroccan spices, that you serve with flat breads and minted yoghurt.

Or aubergine slices, with an orange-scented yoghurt sauce

Or chicken kebabs - chicken breast cut into chunks and marinated in oil, lemon, ground cumin, ground coriander, ground turmeric, ginger and garlic

Don’t cook it in the oven first- you just double your chance of food poisoning and dirty two places.

Make sure your bbq isn’t too hot so you don’t charcoal the outside of the meat- also consider the height of the griddle from the coals.

Use a meat thermometer if you’re that bothered. Turn regularly.

We're doing a barbie tomorrow. It's a special one, so there's lobster salad on the go, with little baby potatoes and lettuce in it.

Then there's saussies (there'd be a riot if there weren't), chicken skewers, a southern rubbed bavette steak, honey soy marinaded steak, for the meats.

For the salads, there's a green salad and a potato salad.

In addition, there is corn on cob, chargrilled asparagus, and roasted capsicums.

Oh, and there's also what we call 'Spanish potatoes', which is parboiled potatoes then fried in a shiteload of butter. . .

Lamb kebabs: cubes of leg of lamb, threaded on kebab sticks alternating with green pepper and onions

It depends on how many people you have attending

For smaller groups I would maybe stick to core items

Burgers
Sausages
Chicken (drumsticks or breast for skewers)
Buns
New potatoes
Crisps
Dips
Veg/crudités

For larger groups I would extend the above and add

Beef kebabs
(Both chicken drumsticks and breast skewers)
Various salads (some just veg and some with cheeses)
Haloumi (to put on the grill)
Fish (salmon I usually go for)

Then assorted puds regardless of party size (I tend to do a chocolate fondue as it's easy to scale based on numbers)

I like doing a huge steak, eg a Tomahawk, so everyone gets a couple of slice each. Sausages are predictable and boring but still essential. I think that's enough meat but we normally end up with chicken wings too.

Potato salad or maybe wedges. Rolls etc optional.

Veg kebabs are good, halloumi too.

I like onions with butter in foil to add to hotdogs.

Then lots of tasty salads. I make a great one with greenish (or can be ripe) mango and a fish sauce vinaigrette. Also coleslaw (homemade, with seeds)

I always eat far far too much

It's to much faffing about doing multiple meats, I just chuck a lamb or half a pig on the spit and then come back a few hours later when it's ready.

Burgers and when they're almost cooked to them with the most melty cheese slices you can get
Sausages
Pork belly or some steak
Halloumi, or even halloumi on sticks with bits of tomato, bell peppers, aubergines and the like
Corn on the cob

Make sure you have enough bread cakes and fingers
A variety of sauces
Salad
Paper plates, cups and napkins

Halloumi with lemon and coriander dressing:

slice halloumi into 8

barbecue for as long as it takes to brown it (not very long!)

then dress with:

3 tablespoons olive oil
1 tablespoon lemon juice
1 teaspoon English mustard powder
1 finely chopped clove of garlic
1 tablespoon chopped coriander
loads of freshly ground black pepper

Supermarkets have some lovely bbq packs.
I always cook chicken in the oven first then finish off on the bbq.
Veggie kebabs also go down well. Remember to soak the kebab sticks in water for about half an hour before you load them ... with mushrooms, corvettes, aubergine, red onion and halloumi.

Remember to oil the food before you grill. An oil spray mist is your friend here.

Beef shashlik thing.
Lean beef like topside cut into cubes. Marinate it in bit of vinegar, salt and pepper. It makes the beef soft. Then just put on skewers alternating with veg.

I brush over mix of bit of oil, paprika, pepper and chili flakes. Squeeze of lemon when it comes of the grill.
