I know I’m not bu reallyGrin I’ve always been a baker but there’s been so many things I’ve never got round to making. Lockdown seemed the perfect time to start experimenting!

Would love to see anything you guys have made too!

@DrMadelineMaxwell you can actually make cheesecake with condensed milk. I used to do that to save time if I had a craving for cheesecake. Just whip it up with the cream cheese instead of using double cream and sugar

Chocolate crumb crust, peanut butter and cream cheese filling, topped with melted dark chocolate and almonds. This was DH’s birthday treat on Friday.

I also do a baked cheesecake, but there’s only two of us right now, and it’s too much.

@DrMadelineMaxwell nigella's no churn ice cream has been a revelation for me , it uses condensed milk. The original rebuild is cover and is delicious but you can mix anything with the condensed milk I made Biscoff ice cream too, I had to loosen it with milk and semi whipped the cream before combining and whisking to soft peaks. Whipping cream makes it lighter than double and a spoon or two of alcohol is good for flavour (I used amaretto with the coffee) and freezing although it works very well without.

This was my cheesecake from last week. It was delicious, and dd just went to town with putting any chocolates she could find on the top. Very rich and lasted a few days as it was so big

@LtdEdition that looks so tasty, although I don’t like peanut butter so would maybe swap that for some form of chocolate spread. There can never be too much cheesecake!!

They turned out really well, they do need to be kept in the fridge though and they're very rich so cut the squares quite small. I froze some and they froze well.

I'm a cheesecake fiend and so is DD but she's a fussy little bugger and I dare not make a big one in case she doesn't like it and I'd have to eat it all.

This has happened. Took me about a week to digest it, though perhaps that's because I ate it in about an hour.

Yes, there are the galaxy eggs. There are also aero balls and milkybar mixup sweets. It was truly delicious.

We've got our eye on making a wispa gold cheesecake next, but I'd quite like to use a smaller tin and half the ingredients, and I'll need to buy a smaller tin.

I leave mine in the oven to cool.after turning off the heat to avoid cracking @recrudescence

@Shannith that’s the thing isn’t it, once it’s made and nobody else is eating it, it seems a shame to waste it doesn’t it! Well that’s what I tell myself anyway when I scoff a whole cheesecake
