I'm using up some over ripe bananas and have a spice banana loaf in t'oven. I'll post a pic when it's out of the tin. As long as it doesn't look like the dog produced it.

Anyone else got delicious looking pics of food they've made? Not normally something I'm into but I think some of us are probably cooking/baking more than usual.

I cook from scratch a lot but haven't made a cake for a while.

Go on then, show me your grub Wink

Quince and apple crumble - crumble made with coconut flour and crushed weetabix to conserve stocks of normal wheat flour!

torthecatlady · 03/04/2020 23:20

@Weedsnseeds1 The stir fry was delicious! Haven't tried the crumble yet but I'm sure it will be nice! Dh has asked me to stop baking because he's putting on weight BlushGrin

We have 2 very ripe bananas so might try a banana bread again over the weekend, am struggling to find plain flour though, don't want to visit lots of shops, our closest is a farmfoods and they had none so might use self raising and leave out the bicarb.

Lazydaisydaydream · 04/04/2020 09:12

@Sh05 Mary berry's recipe for banana bread uses self raising flour AND baking powder. It's delicious! And only needs two bananas.

Ooh yum those scones look amazing!

Does anyone have any recipes for plums that refuse to ripen? Could stew them, but want to do something a bit more interesting.

Ninkanink · 04/04/2020 12:41

Oh fantastic scones! I’m so hungry right now!

RosesandIris · 04/04/2020 12:49

Museum

Please can I have your recipe for the scones?

ivykaty44 · 04/04/2020 13:13

Crumble today, it’s rhubarb with ginger, the smaller pots are rhubarb with brandy soaked sultanas.

Cauliflower cheese to serve with roast later & one for Monday with jacket potato

Beer bread - using Hoegaeten

Ninkanink · 04/04/2020 19:29

Looks awesome! I’d totally try to make some...if I could convince DH to donate some of his stash. Grin

Weedsnseeds1 · 04/04/2020 19:37

Nink you need a bottle conditioned one ( cans are pasteurised). If he has one where you can see yeast at the bottom of the bottle, that is perfect. He can drink the beer, you can coax the yeast back to life with some warm water, sugar and flour

YouDoYou18 · 04/04/2020 19:47

I made toad in the hole this evening and while it’s so easy to make, I was still so proud 😂 and a self saucing butterscotch pudding that I highly recommend to everyone! The recipe is on bbc good food :)

@Weedsnseeds1 that’s awesome. I’ll definitely read up on some recipes! Which one did you use? Sorry if you’ve already linked but I’ve not read back through the thread...

We’ve got bottled ale...would that work?

Weedsnseeds1 · 04/04/2020 20:22

I used Hoegaeten - check the label to see if it says bottle conditioned

Ninkanink · 04/04/2020 20:23

Ok thanks!

chilledteacher · 04/04/2020 20:29

DS2 made these as a school task. We ran out of butter for buttercream so the last few are melted chocolate.

I didn't use a recipe as I have made damper bread on camping trips, it worked better under kitchen conditions.
You need to be patient and use a sort of sponge method - beer where you can see a layer of yeast on the bottom of the bottle works best, cloudy beer like Hoegaeten, use about half a bottle. Add a bit of warm water to bring to blood temperature. Whisk in flour to sort of pancake batter consistency, cover and leave in a warm place for several hours.
Then add in rest of flour ( and you can add other cereals to stretch the flour a bit - I put pinhead oatmeal in this). Plus some oil or other fat and pinch salt.
Kneed a couple of minutes, leave another hour or so. Shape, drop in a cast iron or similar oven proof pot, lined with greaseproof.
Let rise for 1/2 hour or so more. Oven preheated to about 225.
I put water in the tray at the bottom of the oven when I put the bread in. Bake about 30 mins
