Supplies are very low and we have another 7 days of self isolation to do so can’t get hold of anything.

I do however have a large whole chicken which according to Mumsnet will feed me for a week.

Going to throw it in the slow cooker today but then need some ideas of what to do with it and how to safely store and reheat.

You don't really make more that couple of portions of stock from 1 carcass tbh. It's good as a base, but certainly wouldn't make chicken noodle soup for 4.

Ask for help if needed. There is lots of help available and people do shopping for others now without an issue.

@Mummyoflittledragon we certainly won’t starve don’t worry. We’ve got enough baked beans to last us through the whole crisis (didn’t panic buy, made a mistake on the online shop months back and ordered 30 tins instead of 3 and then was too embarrassed to admit my mistake and send them back!)

Lol. I’ve done that with fresh tomatoes in the past - 5 packs instead of 5. The first time I did it I kept them, the second time I admitted my mistake and didn’t.

There are 3 of us

Day 1 roast chicken breast and one leg drain of juices for either gravy or soup later
Day 2 chicken with chips and salad or perhaps chicken curry the other breast and leg
Day 3 pick off meat around breast wishbone and two wings and oysters from underneath make either soup or pasta bake type thing

There are 2 adults in this house and we buy a large chicken.

Key is smaller portions of meat and much more veg.

Day 1 - Roast Chicken.
Day 2 - Chicken Tagine
Day 3 - Left over Tagine
Day 4 - Chicken Curry
Day 5 - Leftover Curry
Day 6 - Make stock from carcass and have risotto

So for 2 adults I can't quite make it go a week, even with some fancy free range chicken from the butcher. But I can push it towards the magical Mumsnet chicken.

We can usually eek out a chicken for 3 meals. First day as a roast, then make make a big enough curry or pie to last for the next two days .

I did this last week;
Roast chicken first meal
Chicken fried rice
Chicken pie with white sauce as filling.
Boil carcass for soup stock I was going to do this last one but was sick of the bloody thing by this time so threw it away.

If you have some leftover curry, but not enough to serve as curry, you can water it down and have it as soup. Maybe add more veg or rice or pasta or something.

I am going to go against the grain here. If you have slow cooked chicken before and like it then go with that. Do no serve any of it in portions like you would meat and 2 veg.

Once it is cooked and cool enough to handle cut it into pieces and then shred. Freeze the bones. Then just use a little bit of chicken and bulk out with the ingredients you still have

Chicken fried rice is easy.
Boil rice and let it cool. This is the main ingredient so make more than usual
Chop your carrot in hall lengthwise and then slice really thin
Handful of peas
Handful of chicken
Soy sauce if possible
Get a big frying pan and put a splash of oil in or butter if no oil
Once it is good and hot throw all your veg
Keep stirring for approx 3 mins
Throw in the rice and keep stirring until it is hot. Approx 3 mins
Throw in the chicken and keep stirring until hot
Add soy sauce if using and serve

Chicken Casserole
Chop potatoes and carrots into approx same size
Boil in some water, just enough to cover the veg until they are cooked. Test with a knife after 5 mins
Throw in some dried herbs
Add a handful of chicken and heat gently until hot
Gravy granules - add a spoon at a time until sauce is thick enough. Keep stirring hard so you don’t get lumps

Pasta Bake
Cook pasta until just done
Drain and keep in saucepan
Add a good dollop of tomato purée
Peas if you still have them
Dried herbs
Add enough hot water to turn the purée into a sauce consistency- do it a spoon at a time
Add handful of chicken
Put into an ovenproof dish
Bake at 200C for approx 20 mins

Baked Bean Pie
Boil and mash potatoes - add a knob of butter, but no milk
Mix beans with a handful of chicken and put in ovenproof dish
Put mash in an even layer on top
Bake at 200C for approx 20 mins or until potatoes are browned on top

I was thinking of this this morning.
Last night Dh roasted two chickens. We had have a breast eah and DD had a leg for dinner. With potatoes and veg
This moring he stripped both and seperated white and dark meat.
chopped into bit he seperated it into 4 baggies of white and 4 of dark meat. (so 1 chicken would be 2 bags of each)
From this each bag will be bulked out with veg and make
Curry,
sweet and sour
Chicken in white wine
Soup. and more
Dh will then boil the carcasses and make stock which he freezes to use as a base for other meals
Tonight he's making chicken and veg soup for tea.

Thanks everyone! I’m going to attempt chicken pie tomorrow as I have the things for pastry and I’ve got some bacon too so can add that.

If you have anything like onion, leek, celery, frozen peas, mushrooms etc then that goes well in chicken pie and will bulk it out. I’ve also added butter beans, when desperate, but the veg is better. And you can thicken the sauce by adding flour and then milk or veg stock, which also makes it feel more substantial.
