Supplies are very low and we have another 7 days of self isolation to do so can’t get hold of anything.

I do however have a large whole chicken which according to Mumsnet will feed me for a week.

Going to throw it in the slow cooker today but then need some ideas of what to do with it and how to safely store and reheat.

How are people making risotto and soup from the same carcass? We always make risotto the day after having roast chicken and we use the chicken stock to make it.

If you've got baking powder, you can make dumplings to go in any soup/stew you make:

125g flour
1tsp baking powder
60g butter
Salt & pepper

Sift flour and BP together. Rub in butter (or grate in cold butter or process in a food processor if you have one).
Stir in seasoning and add water, a tablespoon at a time, stirring until it comes together in a doughy mass.
Shape into balls (ping-pong size-ish) and drop into simmering soup/stew. Cook for 30 mins.

Ps You don't have to use exactly those weights for dumplings: it's basically half the weight of fat (could be butter/suet/grated cheese) to the weight of flour, with the baking powder adjusted accordingly.
If you have SR flour, you don't need baking powder.

You can also flavour them with a teaspoon of eg dried herbs/mustard/horseradish.

Roast first day. Use only one breast between you if possible. Take the meat off both legs and freeze each separately the same day. Next day make chicken salad with half of the other breast, and chicken pasta bake the day after with the other half. Use one of the frozen legs to make chicken fried rice. Then chicken broth with the other.

Large chicken + 2 adults, 10yo and 4yo

Meal 1: slow cooked for a roast dinner (with some meat portion control)
Meal 2: chicken pie (ready roll puff pasty with frozen leaks and sometimes left over gammon too). If we can put gammon in, we can usually get two meals out of the pie (again with pie portion controlling), so a max of 3 meals from one chicken.

Chicken biryani is a good way to make a little chicken go along way using some of your rice and peas. Just stick with cooking it in the slow cooker if that’s the way you prefer. Then you can add the carcass back into the cooking juices in there, add some water and let it cook a stock/bone broth.

You’ve had some good chicken advice. However, I think you need to look at wider options, get yourself on the local Facebook and ask for assistance. Do you have any friends, family or mums / dads you know from preschool aged dc to call on? Has no one put a note through your door offering assistance?

I’ve had help getting a prescription (antibiotics), bits and bobs of food from one of my friends and a few offers including a note through my door.

Roast for 20 minutes per 450g (1lb), plus 20 minutes in total. A 1.8kg (4lb) chicken will take 1 hour 40 minutes to cook. Baste the chicken 2-3 times with the cooking juices whilst it roasts and cover with foil as soon as it is golden brown.

Oven at 180C for about 1.5 hours. To check it's done insert a knife tip or skewer into the thickest part ( leg) and check juices run clear. If pinkish juices leave to cook a little longer

@Mummyoflittledragon we have helpful neighbours who have fetched us bread and milk but I don’t like to burden them with a proper shop. We got the butcher to deliver yesterday so have some meat in and I’m hoping someone else in the village will be doing a supermarket shop and offer to pick something up.

@RJnomore1 I’ve got a few spag Bol dishes in the freezer, fish fingers and can do jacket potatoes with beans so we should manage till mid week I think.

If you can’t leave then Morrison’s food boxes come with dpd. They’re £35 and contain a weeks worth of food for 2 adults. There’s a meat eaters and a vegetarian option. They have some household essentials and toilet roll in too.

You could do a paella on day 2 or 3 with those ingredients. You don't have any prawns but you have peas, chicken and the right spices. Look up the BBC easy paella recipe.

Are there any fruit veg delivery boxes on your local Facebook pages? I was a supermarket shopper from habit and live in a shit area but managed to find hire a few delivery options.

Honestly, I never got more than 3 meals out of a chicken, even with strict portion control (2 adults, 2 little ones). Meal 1: one breast, one leg in a roast. Meal 2: the other breast and leg in a stew/pasta/pie. Meal 3: carcass and remaining bits in a soup. Any more than that and you more have the idea of chicken rather than an actual chicken meal! Now have a a teen and a tween so can get two meals only.

I'd roast it and then shred all the chicken off the carcass. To make it go further you'd be better of not having a roast but have meals that only need a little bit of meat. Put a handful of shredded meat in each. You'd need veg to bulk it out though

Chicken and potato and/or bell pepper curry
Leftovers can go on jacket potatoes
Chicken & veg pie
Chicken & veg stir-fry
Chicken mayo pasta, with sweetcorn/peas
Pasta bake
Chicken fried rice
Soup

Feed your family for £20 a week will have good recipes for this portion control.
