Macaroni cheese on a roast!!!!!

Light hearted ....

Several of my friends are having macaroni cheese on a roast dinner..... is this the norm? Plastered all over social media.

I have heard of cauliflower cheese but never ever heard of macaroni cheese! I'm actually horrified and it looks disgusting! 😂

I guess if people like it, then why not? I love mac&cheese and try to have it at least a few times a year(if i dont consider it a 'treat dinner'-I swear I would eat it everyday!)
First time i went to the States(many years ago), I visited Bubba Gump and ordered a side dish of mac&cheese. I hadn't read the menu properly and out came this massive portion of mac&cheese with shimps! It blew my mind that prawns could go in the recipe, honestly had never come across it. I ate it but have to say not repeated it ever again.
Slightly on a tangent-anyone got a luscious recipe to share?

BenWillbondsPants · 07/10/2019 05:57

Cauliflower cheese, macaroni cheese, anything cheese. It's all good and should be eaten with whatever the hell you like. 😆

longwayoff · 07/10/2019 06:52

Am American friend, dispiritedly prodding my lacklustre English Mac cheese (boiled Mac in white sauce made with couple of ounces of cheddar. Long time ago!) said 'my turn to cook next time '. Cooked macaroni, on a cooked tomato and onion base, then alternating layers of macaroni, cheddar and sliced tomato. Finished with cheddar, crumbled crispy bacon and breadcrumbs. Like a lasagne. Bechamel would be an option. Revelation! I never made the ww2 version again.

Fizzypoo · 07/10/2019 07:20

Jamaican mac n cheese can be made like this:

Make cheese sauce like normal but crumble a chicken stock cube into it then add cooked macaroni.

Layer it up in a baking tray with mozzarella being the 'bit' in between layer. Add mozzarella, cheese and bread crumbs to the top and bake. It's very nice. There will probably be 100 different ways to cook it but my ex mil made it like that and it was scrummy.

Adreamaday · 07/10/2019 07:53

My American friends have Sweet potato(or Yams as they call them) baked with marshmallows with Thanksgiving dinner. I'd rather have the macaroni and cheese.

Bluesheep8 · 07/10/2019 08:05

Macaroni cheese is a meal in itself in my opinion, not a side dish.

hadenough · 07/10/2019 08:18

YA BUT purely for the fact you wrote 'macaroni cheese' absolutely hate the American version which is now becoming so common place.

hadenough · 07/10/2019 08:19

YANBU*

DH still thinks fondly of the deep fried macaroni cheese pie he had in Aviemore about 15 years ago.

I love macaroni cheese, I could probably eat it for every meal, but would be enormous. I’m not a meat eater, but it doesn’t seem right with a roast, even as a veggie meat-substitute.

BarbaraofSeville · 07/10/2019 08:28

I thought sweet potatoes and yams were different, because a popular Carribean dish is 'sweet potatoes and yams'.

Fizzys Jamaican macaroni cheese sounds nice, but not the American version above. It needs sauce.

If I'm feeling fancy and want a 'meal' version of macaroni cheese I do one with macaroni, cauliflower, bacon bits, lots of cheese sauce and sliced tomatoes, breadcrumbs and grated cheese on the top, served with salad.

BarbaraofSeville · 07/10/2019 08:32

Ha ha bike I feel that a deep fried (battered?) macaroni cheese pie is a step too far, but I do love a macaroni cheese pie and had a marvellous one from a small pie shop in the Highlands earlier this year.

I also went on a short overnight trip to southern Scotland for work a few weeks ago and had macaroni cheese for lunch on both days.

The one at the fancy service station south of Glasgow was very nice, but as you'd expect, the one from Tesco cafe was crap. I should have known better, but sometimes you have to take what is available.

chemenger · 07/10/2019 08:52

There is nothing guaranteed to have MN clutching its collective carb phobic pearls than the mention of macaroni cheese with chips, one of the best school dinners in my day, and still quite delicious on occasion. Peas and brown sauce optional.

ChilledBee · 07/10/2019 08:58

Sweet potatoes and yams are different in the Caribbean but not in the US. I think SP might be the only type of yam that is grown in the US.

BarbaraofSeville · 07/10/2019 09:11

Indeed chem. Can you imagine the outrage at a macaroni pie with chips and garlic bread?

Quadruple carbs. Mumsnet would implode.

Not that I've ever seen such a wonder, but I do have a good imagination for such things.

BikeRunSki · 07/10/2019 09:14

@BarbaraofSeville - Cairn Lodge? Will remember that, we go to Scotland a couple of times a year.

BarbaraofSeville · 07/10/2019 09:21

Yes, it's owned by the same people who are responsible for the renowned Tebay and Gloucester Services.

£££s, especially if you get carried away in the Farm Shop, but hey, all service stations are expensive, and it's less painful when you actually get nice food for your money instead of the muck at Welcome Break etc.

And they do free tapwater on a nice stand with glasses etc, so you don't have to buy bottled water to have a drink with your lunch.

Passthecherrycoke · 07/10/2019 09:33

“Why aren't there more Caribbean restaurants? Never understood the lack.

Me either, until I went to one. The clientele were like my bloody family - always late, always changing their order, wanting to socialise rather than sit and eat and a basic meal out took 5 hours. The profit margin must’ve been shockingly low.”

@Merryoldgoat this made me laugh because it’s so true 😭 we used to use a Caribbean take away regularly- the food was amazing but they could never pull together a delivery driver so frequently send the food round by taxi. This was pre Uber so often it would come in a back cab 🤣😭

BikeRunSki · 07/10/2019 09:37

@BarbaraofSeville, my PiZl are in Gloucestershire and DM in Somerset, we are veterans of Gloucester Services. It’s the inky time I ever get to go clothes shopping in peace!

drspouse · 07/10/2019 09:41

I knew about the Southern US but not that it was a Caribbean thing.
My Korean American friend says they used to have a dry turkey that nobody ate together with a Korean banquet for Thanksgiving. Kim chee with your roast dinner anyone?

Merryoldgoat · 07/10/2019 10:02

@Passthecherrycoke

Honestly, it’s unreal. I had to tell my family my wedding was an hour earlier than it was.

I was being driven off in the wedding car and heard my aunt offering everyone food and drink. Might be the first wedding delayed because the grandmother of the bride was late.

All of the white British people who’ve married into our family find it baffling and then quickly learn ‘that’s how it is’

The first Christmas my husband spent with us no one turned up until 11pm - he couldn’t understand why we weren’t concerned 😂

Legomadx2 · 07/10/2019 10:05

Gross

Passthecherrycoke · 07/10/2019 10:08

🤣🤣 I waited 2 hours for a bride once. All the white British guests were upset thinking he’d been stood up at the altar

cannotmakemymindup · 07/10/2019 21:58

Ah black people time it runs deep. I have it myself. I actually tell myself times to leave half hour than I need to so I set off on time. It's actually usually trying to fit doing touch in before you go out and jobs taking lonher than you ever imagine.
My mum and aunts when it comes to meals if we want to eat before 8pm even though told 6pm then me and my cousin help/take over as we've both worked in kitchens so can actually do food on timeish. It's the best though I wouldn't have it any other way. It's relaxed, late night chats and slow lay in mornings plus everyone mucking to help clear up, tidy etc whilsy stopping every five minutes to have a chat.

Literally can't wait to see my family after all these chats about West Indian and Caribbean food.

Serin · 07/10/2019 22:28

I love macaroni cheese, I serve it with roasted Mediterranean veg or ratatouille.
Or just roasted tomatoes.
Never had it with a roast, might give it a try.

Merryoldgoat · 07/10/2019 23:04

@cannotmakemymindup

Did all the adults eat standing up whilst all the kids sat down? That was the hallmark of being a grown up for us. Kids first, then the men (sigh) whilst the women ate standing up.
