Homemade chicken liver pâté, or failing that a really good deli version, is the food of the gods! I only like to use organic livers though but can't seem to find them anymore.

Those are the livers I used to use but my Waitrose has stopped stocking them. Grrrr.

You're not wrong. If it didn't have about a pound and a half of butter in I'd make it all of the time! We have chicken liver pate and smoked mackerel pate every Christmas. M&S do the best shop bought one imho.

Oh god, sounds divine. I don't eat very much meat at all but my weakness is ALL the pate. To make it even worse im pregnant so can't eat any at the moment, sad times.

It's lovely, the only issue is guessing the seasoning unless you want to taste pink oozy livers and I don't.

Plenty of brandy! Cheap is fine.

Yes!! Definitely worth making your own - I hate shop pate cos it's full of shit meat & crappy other things, but when you get good organic livers, unsalted butter, onions etc, you know exactly what's in it. Y-Uh-m!!

I made some a month after DS was born, in a sleep deprived stupor, I'd missed it so much! Also use the duchy chicken livers from Waitrose, tried others but not as good

Got to leave the livers pink and oozy! I pass mine through a fine sieve for a parfait texture, and sometimes use calvados instead of brandy, yum.

Love it, also put it through the fine sieve for a velvety texture.
I like to add fresh thyme, port and mushrooms to mine.
Caramelized onions, in butter, then add the diced mushrooms, then the port, salt and black pepper.
When they are reduced then the livers which have been soaked in milk, then rinsed go in.
Lightly cooked with lots of butter.
Heaven on toast or brown bread.
A smear of red currant jelly is delicious with it too.
Will have to make soon. Trouble is I'm the main one to eat it.

I'm also a fan of homemade smoked mackerel paté , roughly chopped mackerel, cream cheese, creme fraiche, spring onion, horseradish, lemon and black pepper. Mix it all together in a bowl, bung it in a dish and leave it over night. Crowd pleaser...
