AIBU to ask for your easy Saturday dinner (healthyish!)

Had a very busy week but don't want to resort to a takeaway full of salt and fat this evening for dinner. I'm not keen on spending ages cooking either, gosh I'm being difficult today! Tell me what your easy go to healthyish dinners are please for 5 of us!

We're having roast chicken thighs, roast veg and gravy.

Put thighs in roasting tin and rub oil in, season.

Ditto carrot pieces, cauli, broc and spuds.

Put in oven for 40 mins or so.

Bulgar wheat in a dish with boiling water and a stock cube. Mix around and bung it in the oven. Chop up a red pepper, put in oven to roast whilst bulgar wheat cooks. About 20/30 mins later, take them out and mix together and add feta cheese.
Serve with salad.

Veggie (or normal) sausages in a casserole dish with a sausage casserole sachet! Serve with a salad or mashed potato if I can be bothered mashing potatoes.

Fajitas.

Pasta with a jar of pasta sauce! Salad/nice bread.

Thanks we love a stir fry but had one for dinner on Thurs. The chicken thighs with the roast veg sound nice, do you put the veg in at the same time as the chicken @SherlockHolmes

Steak (or sausages) with a feta salad. If we've got the energy we might bung some oven chips in as well

Pasta and add either diced bacon, peppers and onion (cooked obviously), quartered cherry tomatoes and Grated cheese to the pan once pasta drained or tinned tuna, tinned sweetcorn, diced peppers and tomatoes with a small amount of mayo.

Chicken wraps - lots of peppers, tomatoes, and salad stuff. Can easily be made less healthy too with lots of cheese & sour cream Grin

My quick diner standby is
Ribs with jacket potatoes and coleslaw.
Easy jackets go in over, 20 minutes before they are ready ribs go in.

Fish tacos a fav here frozen fish battered or breaded cooked and sliced placed in small tortilla wraps with salad, guacamole, salsa and garlic dip

Hardboiled eggs with salad and new (or tinned) potatoes?

Jacket potato with grated cheese and/or baked beans?

Tinned tuna drained and mixed with mayo, pepper and some chopped salad/raw veg/apple. My kids used to like it inside pitta bread or on a tortilla wrap.

All standbys in my house (I'm assuming you're not veggie, apologies if you are!)

Not exactly healthy but a nice shop-bought quiche, new potatoes and salad.

A frittata with whatever veg you have handy with crusty bread, salad and coleslaw.

If it’s just me I love a picky dinner: toasted pitta with jalapeño hummus or tomato salsa, breadsticks, hard boiled egg, veg crudités, pickles or beetroot, some cheese.

a nice change from carbonara.... everyone Wolfed it down.... the sauce did look a bit like I’d blended one of the toy story aliens at first but it was delicious
