@hookiwooki ha! We’re in NW London but full of the lurgy so you probably don’t want to come tonight!! Recipe changes as I’m disorganised but if I’ve got my game on it should be this (and I’m rubbish at quantities so sorry!)

Chicken tikka

Chicken breasts
0% natural yoghurt
Ground cumin
Ground coriander
Curry powder
Mint sauce
Lemon juice

Chop chicken
Mix together everything else
Add chicken
Leave in fridge overnight

daal

1 onion
2 cloves of garlic
Garam masala powder
Curry powder
Black mustard seeds
Dried red lentils

Chop onion and garlic and fry for 5 mins
Add spices and fry for a few minutes more
Add lentils and enough boiling water to cover
Cook until really really mushy (depending on lentils maybe half an hour/45 mins) stirring occasionally

Sweet potatoes

One large sweet potato
Ground cumin
Oil

Chop sweet potato into 1cm cubes
Toss in oil and cumin
Roast in oven for 30 mins turning occasionally

Mint yogurt

0% natural yogurt
Mint sauce
Ground cumin
Ground coriander
A little sugar/sweetener if it needs it

Mix all together

Pickled red onions

Red onion
Red wine vinegar to cover
Sugar/sweetener

Finely slice red onion
Mix in vinegar and sugar
Leave to sit for half an hour - stirring occasionally

everything else

Chop Spinach, Spring onions, Cooked beetroot, Radishes, Cucumber, Cherry tomatoes and combine in a big bowl

Grill the chicken tikka and top the salad with everything made above as well as shop bought mango chutney and broken up shop bought papadoms (I like the make at home cooked in the microwave instead of oil)

It is bloody lush - and sounds like a lot of work but isn’t once you’ve got the chopping out of the way!!

Cajun shrimp and rice.

I use this recipe, but with more tomatoes, garlic, and Cajun spice. I also serve the rice separately.

Goat shawarma here - will make flatbreads but have shop bought back ups incase it all goes a bit wrong. I have a patchy history with flatbreads!

We’re having Cowboy beans-

mince, butterbeans and roasted sweet potato (roasted with cinnamon and black pepper) mixed with passata and shop brought BBQ sauce. Serving with rice and tortilla chips.

Not particularly healthy, but one of my kids favourites!!

Nothing. It's DH's turn, hooray!

Yesterday though I made Chinese chicken wraps, so yummy and quick! A bit like poor man's duck pancakes. Chicken thighs baked in oven with some oil and hoisin sauce trickled over. Sliced up little gem lettuce and cucumber into batons. Mini tortilla wraps.

Shredded cooked chicken with two forks, each person assembled own wraps (with extra sauce if desired) and applied to faces! Even my whinging 5 year old liked it.
