We had asparagus and pea risotto last night, funnily enough. Haven't bothered to make risotto in ages as I find the stirring a bit time consuming

Google the BBC baked one - no stirring.

Roast chicken dinner for DH and DD. I'm doing a butternut squash traybake with lots of veg and lemon and thyme for me and DS as he has asked if he can eat veggie with me for a week.

There should be plenty of chicken left over for DH and DD for sandwiches and tomorrow nights tea too - although I can't quite make one chicken last a family of four for a week yet Grin

Not exactly dinner but I made 4 of these yesterday for my lunches... bloody delicious and really do stay fresh for four days!

Chicken jalfrezi with red peppers, tomatoes and mushrooms served with rice for DP & I. DS is 12 months and will probably have baked beans on toast with some veggies to feed himself.

I went to the butchers for some chicken breast and he'd just brought out some large steak pies. They smelt so good so I bought one 🤦🏻‍♀️ not exactly healthy but I can't wait. Will do it with veg at least.

This evening will be the inaugural use of my new instant pot. I'm making sausage and lentil stew. I've baked some fresh bread this afternoon to go with it.

There are loads of recipes on line if you google ‘mason jar salads’ - it also tells you how to layer them correctly so they stay fresh and crispy.

Mine this week are coronation chicken which I kind of make up...

Basically toss chicken in oil, curry powder and cumin and fry off

Mix curry powder, cumin, coriander, turmeric, garlic powder, a splodge of mint sauce and and 4 tablespoons of mango chutney with mayonnaise (I actually do half mayo, half 0% fat yoghurt)

Stir in the cooked, cooled chicken and then stick that in the bottom of the jars. Then in order of layering top with

Red onion
Cherry tomatoes
Radishes
Carrot
Mange tout
Celery
Red pepper
Cucumber
Lettuce

Basically you put ‘wet’ at the bottom and then layer up salad in terms of toughness - so red onions are nails and can sit in the dressing for up to four days without going soggy and then you go up and up to lettuce/spinach/nuts/croutons etc which would go soft.

They really do last - I was amazed!

I’m doing the kids quick and easy tonight: sausage pasta with a sauce I made and shoved in the freezer a few weeks ago!

I’m planning on slobbing out on the sofa after they’ve gone to bed with a pizza and bag of peanut m&ms to watch Big Little Lies Grin (don’t judge me....third pregnancy has hit me hard and I want comfort food Blush)
