I'm looking for inspiration ! Plus, I just really like these threads .

Traybake: organic chicken legs (amazingly good value at 2 for £3.00 in M&S I thought), maris piper potato wedges, chorizo, garlic, red onion, courgette, red and yellow peppers, oregano. All cooked on one oven tray with some olive oil and salt and pepper. With plain mixed green salad.

I reheated a spicy cauliflower and lentil thing I made and froze on Sunday. It didn't reheat very well and was a bit mushy and, well, just not very nice.

Cheering myself up with strawberries and fat free yoghurt .

Nice and (lazy) simple tonight for me. Butterflied chicken breast coated in breadcrumbs and fried, with coleslaw and cucumber....washed down with a biiiiig gin and tonic.

Shakshuka with eggs and feta.

Made some delicious beef mince enchiladas yesterday - beef mince, spice mix, red onion and green pepper fried up then put in a wrap with CHEESE SAUCE . Wrapped and rolled, topped with salsa and cheese and baked.

Got one with salad tonight, DP gone away until Tuesday so lazy dinners for me.

Tacos and salad here tonight. Shopping day today and not had time to meal plan, so 13yo ds looked through what I’d bought and made the executive decision :)

Sounds nice, but it won't be. My cooking is hideous x

I'm not, it's do it yourself day in our house on Thursdays.

Spaghetti with a homemade buttery tomato and Eggplant sauce. Top with crispy chorizo and Parmesan. Maltesers for pudding!

Tonight I’m making pan fried pollock fillets with a lemon and caper sauce, with jersey potatoes for my OH, and green beans on the side.

Ugh another fast day so will have leftover fennel and tomato soup. So hungry but riding the motivational wave and I’m going to the theatre so I can avoid the pasta pesto everyone else will be eating!

I'm having a go at patatas bravas with chicken & some veg. Got some homemade tomato sauce in the freezer so going to add some smoked paprika & chilli. Probably not authentic, but should be tasty.
