What can I eat that takes virtually no prep but is delicious?

I have a DP free evening and the different routine means I've forgotten to feed myself... despite being the person who usually thinks about food constantly.

I need something now, but don't want to spend more than 5 mins preparing it and i want it to be utterly delicious. AIBU to think that this isn't possible? Help me, wise MNetters Grin

This is my fave quick quick meal

Fry up halloumi

Ina separate bowl-
Chopped avocado
Handful of crash coriander
Some black olives
Some chopped cherry toms
Lemon juice
Olive oil
Lots of black pepper
Mix it up, warm up a flat bread, price of sour dough, or what have you then throw on the halloumi and the the salad. Eat immediately.

Oooh I love a cold tea!
Tiger bread with butter, olives, sun dried tomatoes etc
Peanut butter on toast
Bread with balsamic vinegar and oil
Avocado on toast
Just realised all my favourites include bread Grin

Honestly, my quick and dirty tea is pasta with a tin of beans as a sauce, covered mile high in grated cheddar. Tastes like university.

Right so I have a crusty loaf and my fridge is presenting me with:

  • cheese (nothing fancy, mind)
  • olives
  • hummus
  • cherry tomatoes

I also have an apple to make it feel more put together, and wine Wine.

I'm definitely coming back to this thread regularly though, I'm going to work my way through suggestions everytime I have a night alone Grin

Hmm, I don’t think this is what you are after, but dh is away and I couldn’t be bothered cooking properly but just grabbed bits from the fridge to add to a chickpea stir fry (onion, spring greens, leek ends, sprouted seeds I have been meaning to use, a handful of coriander, lemon juice and a teaspoon of Harissa), ready in two minutes and tasted really nice.

Fried halloumi over finely chopped tomatoes, cucumber and pesto. Takes 3 minutes and is Delish- add a drizzle of balsamic glaze if you're feeling decadent

When DP is away I buy myself M&S Gastropub fish and chips, because he hates fish and we never eat it at home.

My favourite easy, quick out-of-the-fridge food is poached eggs on toast. Sometimes with bacon, avocado, or baked beans, usually with chilli sauce. Scrambled eggs on toast also quick and good, top with grated cheddar - but a pain in the arse in terms of washing up.

Every meal I make myself has to follow this criteria because I am a lazy bint.

I find omelette is my go to. Prawn, or mushroom, or cheese, or ham. With a side salad of cherry toms, lettuce, spot of salad cream, sprinkling of salt.

Yum yum easy peasy super quick healthy low calorie.
