To ask for your best tiramisu recipe?

Also any no oven starters please. Oven bust and am catering on Saturday!

best one ive ever tasted was in a small restaurant in Paris but it had summer fruits and compote instead of coffee it was lush shame the chef wouldnt give me the recipe

Mine is (for 10) 6 egg yolks plus 6 tablespoons of sugar, a large glug of Cognac and a bit of vanilla whisked over a pot of simmering water until tripled in size. Whisk 3 egg whites into peaks and 175 ml of cream in separate bowls. When the yolks are done whisk in about 450/500g of marscapone then fold in the cream and whites.
Prepare and cool espresso coffee add another good glug of Cognac and a tiny bit of sugar, I find the sponge fingers already sweet, dip one side of the biscuit and layer. Add marscapone mix, grate dark chocolate then another layer of sponge fingers and marscapone cream grated chocolate.
Best hangover cure ever.
