To ask for your very best brownie recipe

Shamelessly posting for traffic, prepared to be told I am vvvvvu!

I'm on a hunt for the very best chocolate brownie recipe. I make good brownies, but they're always just...good. Our friend group are having a brownie-off and id really like to win!

Apart from the time I made red wine brownies which were flipping amazing but crazily rich, I don't seem to have found the perfect recipe.

I'm looking for gooey and soft but not so soft you can't pick them up (nigella, I'm looking at you!).

So help me with your best Brownie recipes and help me win!

Bare with me and I will find the foolproof recipe that I use.

SalmonFishing · 31/03/2019 02:38

Ghirardelli Brownie Mix

Better than any homemade recipe

flabbythighs · 31/03/2019 02:47

I use the nigella recipe that she used as birthday brownies ( her photo has candles on it ) give it an extra minute or two in the oven - keep checking - it will still cook a bit more once you bring it out too
Use best quality chocolate , a dark one with high % cocoa solids
I usually leave out any nuts
I've used lots of other recipes but keep coming back to this one as I think it's the best and many friends say so too
Hope this helps

flugelhorn81 · 31/03/2019 02:51

For normal brownies I use the BBC Good Food best ever brownies recipe and usually use brown sugar.

For something different, this is amazing but so rich and dense: www.poiresauchocolat.net/2012/02/salted-caramel-brownies.html?m=1

BitterAndTwistedChoreDodger · 31/03/2019 02:54

You need Suzy Wong's crack brownie recipe - a Mumsnet classic.

SalmonFishing · 31/03/2019 02:59

If you are going to bake your own brownies rather than use the Ghiradelli mix (sigh) then recipes which use cocoa powder rather than melted chocolate always taste better. I don't know why this is but it's true. Alice Medrich's recipe is great.

DoubleNegativePanda · 31/03/2019 03:00

I was coming to suggest SuzyWong's brownies but it's already here. Absolutely the way to go!

pinotgrigio · 31/03/2019 04:56

Definitely SuzyWongs brownie recipe.

Magmatic80 · 31/03/2019 05:04

I learnt from a cookery school to use 50% cocoa solids chocolate (not higher), and also wait 10 minutes after putting in tin before oven.

These ones, frosting optional. They are so yummy.

WinkysTeatowel · 31/03/2019 06:36

These are the best Brownies ever... www.beantownbaker.com/2011/06/my-favorite-brownies.html

I have never made them for someone new without being asked for the recipe!

And they freeze well.

Harveyrabbit76 · 31/03/2019 06:42

Jamie Oliver's recipe is great

This is my go to brownie recipe. I always get asked for the recipe when I make them. It's also by Donal Skehan, but fudgier than the one a PP posted. Good Luck!

NiteFlights · 31/03/2019 06:48

The Guardian ‘perfect brownies’ recipe. I make it in the magimix (including ‘folding in’ the dry ingredients). A key element is putting the tin into a baking tray of ice water straight from the oven.

MaggieAndHopey · 31/03/2019 06:48

I used to always make the Nigella birthday brownies but increasingly I found them too rich, and not quite the right texture. So for the last few years I've been making these,

www.theguardian.com/lifeandstyle/wordofmouth/2010/sep/09/how-to-make-perfect-brownies

but instead of the walnuts and some of the dark chocolate, I add three bars of chopped up Snickers.

Taneartagam · 31/03/2019 06:52

These ones are out of this world amazing. Especially if you swap the flour for ground almonds.

Darcydashwood · 31/03/2019 07:33

The Hummingbird Brownie recipe has NEVER let me down and the beats home made brownies I've ever had! They are my go-too when I want to pretend I'm a better baker than I actually am!

www.lovefood.com/recipes/69299/hummingbird-bakery-chocolate-brownie-recipe

Really simple too!

MonaChopsis · 31/03/2019 07:42

I was just coming on to recommend the Hummingbird Bakery recipe too. Amazing.

Camomila · 31/03/2019 07:45

I always use the hairy bikers recipe with chopped pecans and sour cherries :)

Duchessgummybuns · 31/03/2019 07:49

Smooth peanut butter in the bottom of a muffin tin and freeze so you have discs (trust me)
Oven has mark 4/180°C
Grease tin and line with baking parchment
Melt 200g 70% dark chocolate with 200g butter in saucepan then add to 400g granulated sugar
Add two eggs and beat
Add 200g plain flour 1sp salt and 1tsp baking powder and mix well
Add half batter to lined tin, press in frozen peanut butter and cover with mix
Bake for 20-30 mins or until edges are starting to crisp but middle is still wobbly
Let cool completely in the fridge before attempting to cut into pieces

Delicious if you microwave them for a few secs then eat with cold ice cream

GnomeDePlume · 31/03/2019 08:03

DD uses the Betty Crocker gluten free mix with extra chocolate (a lot of extra chocolate). The resulting brownies are excellent. She only stumbled on this when DH accidentally bought the wrong mix.

Pick a chocolate which is gluten free and win the competition on two fronts!

12thofnever · 31/03/2019 08:14

I found my best batch of brownies were the ones where I ran out of cocoa powder so used maybe half cacoa powder instead. It’s a bit expensive to use all the time though!
I use a recipe I got in a box of Happy Eggs

Green and browns ultimate chocolate brownie, they're gooey on the inside but with a crisp crust. Always received rave reviews about them! The vanilla essence really brings out the chocolate flavour as well.
