To ask for your very best brownie recipe

Shamelessly posting for traffic, prepared to be told I am vvvvvu!

I'm on a hunt for the very best chocolate brownie recipe. I make good brownies, but they're always just...good. Our friend group are having a brownie-off and id really like to win!

Apart from the time I made red wine brownies which were flipping amazing but crazily rich, I don't seem to have found the perfect recipe.

I'm looking for gooey and soft but not so soft you can't pick them up (nigella, I'm looking at you!).

So help me with your best Brownie recipes and help me win!

I've tried a lot of brownie recipes, but the best by MILES has been the Nigel Slater one posted on page 1. Except that over the years I've adapted it to add more and more chocolate each time, and it's got even better. Seriously, they look like nothing special but they taste better than anything. When I make them to take to work people are always going OTT in a sort of omg-these-are-amazing-can-i-have-three kind of way. Nothing I've made has ever got the same reaction, and it happens every time, from different people.

Another vote for the Hummingbird Bakery. I use the Green and Black's high-cocoa chocolate. They seem to come out better when cooked in parchment-lined metalware, rather than silicon.

There are so many variations!

I've had some really rubbishy Brownies over the years (from cafes)
DD says I make the best ones

The eggs and sugar whisked until it is primrose yellow . Makes the crust that crisp sugary way

Brownies are always best the next day

I like walnuts in mine (DD doesn't) so I sometimes add some to half the tin (just drop onto the mix and prod under the surface) Or chopped mini Toblerone .

And they need to be squishy but not raw Nigella I'm looking at you. I want to eat mine with a cake-fork not a straw .

Oooh some great suggestions, thank you! Going to have to do lots of trial bakes now, what a hard life!

This recipe I got from a lady I went to cake club with. Instead of using cupcake tins I just put it all in a big brownie tin. If you are a fan of peanut butter, cookies and brownies, you will love this.

10oz (300g) plain chocolate
7oz (200g) butter
7oz 200g) soft brown sugar
3oz (75g) self raising flour
3 eggs
7oz (200g) white chocolate (I use this instead of nuts as DD has allergies but you could use walnuts, just use less of them)

Melt the plain chocolate and butter together in a bowl over a pan of hot water. Meanwhile, beat the eggs and sugar together in an electric mixer until light and fluffy. Leave the white chocolate wrapped and whack it with a rolling pin, unwrap it and add it to the egg mixture, add the flour. Let the melted chocolate mix cool a bit then put it in with the other stuff and mix until just blended together. Put into a 11in x 8in (28cmx20cm) brownie tin lined with silicone paper and bake in the oven at 190°C/375°F/Gas Mark 5 for 35-40 minutes until the centre feels just firm on the crust but soft underneath. Allow to cool in the tin before turning out and cutting.
