AIBU to ice a cake with cream cheese frosting and leave it out overnight?

I don't want to refrigerate it because it can change the cake texture, but I'd rather ice it tonight.

Can I leave it on the kitchen counter overnight in the UK without it going bad?

It won't go bad but it might melt (depending how warm your storage place is) and it won't last as long. Nothing will happen to it if you refrigerate overnight then bring to room temp before serving.

Op, you can leave it out but it might melt as a pp said and not look as nice. I'd refrigerate and bring it out tomorrow.

Agree being in the fridge changes the texture and sometimes flavour of cake but it will go back to the way it was once it comes to room temp again.

It won't go bad as long as it's in a relatively cool place but it might not look as good. Putting in the fridge is fine as long as it has enough time to get back to room temperature for when you serve. It'll help sent the frosting too!

I have made that exact cake (yum!) I know what you mean about cake texture, but it is pretty fudgey and was fine after being in the fridge. Just get it out an hour before serving.

can you make the icing tonight and stick it in the fridge then ice it tomorrow? less work to do tomorrow and less to worry about the cake texture and icing going off or getting darked on

Going against the grain here, it'll be fine out if you can cover it (we have a tupperware style cake box for big cakes - I think it's cat-proof!). I've made cakes with a cream cheese frosting, and they're normally eaten before mould is an issue, but on the odd occasions we've just had too much cake around, it's taken at least 4 days to go bad. I've done the experiment so you don't have to!

Cream cheese needs to be refrigerated, most carrot cakes have cream cheese flavoured frosting, not actual cream cheese. As Elephant said put it in the fridge but allow it to come to room temp before eating and it'll be fine.

Cream cheese frosting will be fine overnight out of the fridge as the sugar acts as a preservative.
