I've woken up with the urge to eat it but there are so many recipes online and I've never made it before so I'm looking for a tried and tested, recommended one!

Anyone care to share?

Ooh yes, I want to know too!

(Also carrot cake)

PurpleDaisies · 03/12/2016 10:46

This is the one I use with an added teaspoon of mixed spice (and sometimes chocolate chips).

Mmm carrot cake. Both veg/fruit based so totally healthy right?

This carrot cake won me a prize...

With the cream cheese icing from nigella's chocolate guiness cake on top.

To be fair I haven't actually tried this one, but the Guardian "The perfect..." recipes are usually good:

Which ever recipe you use, give it an extra 5-10 minutes in the oven after you think it's "done"-pop a damp tea towel on top if you're worried about the top over doing. Those extra 10 minutes help with the consistency in the middle.

Google BBC banana bread recipe it's lovely

Sukitakeitoff · 03/12/2016 10:51

Oh, someone beat me to it! Grin

GorgeousPie · 03/12/2016 11:03

Nigella has a recipe for one that is a favourite in our house! The chocolate variation is also pretty good Smile We don't usually use the rum though, just the sultanas.

Thank you all!

enchantmentandlove · 03/12/2016 13:03

I second the Mary Berry recipe. I usually add some mode spices, as well as maybe walnuts, pecans or chocolate chips. I also like to add the chunky demerara sugar for a crunchy topping!

The one in the top bananas is nice

I always use this one. The coconut makes it extra nice. I omit the white choc chips altogether, though.

This one is lovely. It has a lot of sugar though so I usually put a bit less in than it says in the recipe.

Delicious, especially with a packet of chocolate chips thrown in.

Thank you! :)

I haven't checked any of the recommended recipes to see if they do this, but before baking I always slice an extra banana into disks on top of the loaf and sprinkle it with brown sugar . gives a nice toffee banana finish.

AwkwardSquad · 03/12/2016 14:58

Delia's, from The Complete Cookery Course, 1983 edition. It's lovely and very easy.

YouTheCat · 03/12/2016 15:43

The Bero book one is really simple and always comes out well.

Nigel Slater's chocolate muscovado banana cake is so good, I would almost swap my PFB for a slice! www.thewednesdaychef.com/the_wednesday_chef/2013/01/nigel-slaters-chocolate-muscovado-banana-cake.html

Everyone I have made I for has immediately agreed it is THE best banana bread ever ever ever. It's also a very forgiving recipe, very receptive to tweaks and substitutions.
