AIBU to ask for your foolproof banana bread recipe?

I've woken up with the urge to eat it but there are so many recipes online and I've never made it before so I'm looking for a tried and tested, recommended one!

Anyone care to share?

I've decided to try all suggested recipes (not at once!)

started with BBC thanks for the recommendation - it came out so well. Currently scoffing some with a cuppa.

paul Hollywood's banana and chocolate chip bread is baked regularly in this house. I replace the chocolate chips with fruit - any kind - and use half the sugar stated and it's still sweet.

I love Nigella's. I don't drain the excess rum off the sultanas (or raisins) though, chuck the whole lot in the cake mix and cook it a wee bit longer.

Happy to! Liked the BBC one switched out plain flour for whole meal plain, and came out lovely and moist with a good "crust".
Was a little sweet, that was only negative, so I would probably put less sugar in next time :)

Ooh - I am going to try Nigel Slaters cake , mines a totally different recipe.
I do have a fabulous carrot cake recipe - I made it for my DGS's christening, so to make sure it was right, I made carrot cake once a week and taste tested it with all the family until we all thought it was the best. It is a bit big , but I cook it and cut it up to freeze now . Here it is Carrot Cake

200 gm self raising flour
115 gm plain flour
350 gm brown sugar
2 tsps cinnamon
2 tsps bicarbonate of soda
250 ml sunflower oil (or rapeseed oil)
3 large carrots peeled and grated
4 medium eggs
100 gm raisins
100-140 gm chopped hazelnuts - some fine, some a bit coarser chopped
zest of 1 orange

Mix together all the dry ingredients
Add orange zest
Mix in the carrot, and gradually beat in the oil and eggs.
Pour into a greased and lined 20 cm square cake tin
bake in a preheated oven 180ºC /160º fan/gas mark 4 for 45-55 minutes

James Morton's one is really simple and really tasty - ignore the pic with icing on though, totally unnecessary! Agree with others to give whatever recipe you make at least another 10 mins in the oven.

Another vote for Nigellas recipe here... I tend to leave the nuts out and not drain the excess rum off of the raisins either and I have used spiced rum when it's all I've had. DS loved the chocolate version too. Have had many compliments on both versions.

I mean sultanas not raisins. And I've used that sultana and dried cranberry mix from Aldi too.

Not strictly the banana bread but hummingbird cake is delicious and pretty easy. I usually don't bother with the brittle on the top but the lime cream cheese icing makes it amazing
