Indian vegetables (microwaved dinner for a supermarket) with a fried egg on top... And a chopped tomato on the side.

YANBU to find it a bit weird. Y were definitely BU to rant at your poor mum about it. My MIL once served us heat & serve pizza with instant mashed potato. Yum. There is no way I would have been so rude and ungrateful as to criticise it.

By the way, the meal she gave you would have been vastly improved by a generous spoonful of Helmans.

yes it is weird, with rice or mash it would of been fine.

Sounds nice to me. Though I'd prefer the veg freshly cooked, and to have some rice.

Sounds perfectly reasonable and a cheap way to add protein.

Lots of countries where food is on average much less affordable than it is in the UK will have common dishes that is something with a fried egg.

The most random appearance of a fried egg that I've ever seen was a pub meal of corned beef hash with a fried egg on top. Confused

That's not random - fried egg on corned beef hash is wonderful! The egg must still be runny, of course, so it runs into the potato and beef. Yummmmm.
