In ridiculously sad excited. I got given an Instant Pot Duo 60 for Christmas and it is utterly fantastic!

I cooked a cheesecake in 25 minutes. It's delicious. Then I pot roasted a 2kg joint of beef in 45 minutes -beautifully tender and still just ever so slightly rare in the middle.

Ive just received mine, bought it on offer with my xmas money as 2016 will be the year I cook properly. I hope. Its Huge. I'll have to do some juggling to find cupboard space. I dithered for ages because its a lot of money even with the discount but didnt think of the size :(

Does anyone whose got one think its too big for 2 occasionally 4 people?

Piglett A whole chicken cooked from frozen takes 35 minutes once it is up to pressure (up to 40 minutes if it is from frozen). So 1hr 15 minutes total. So your joints would probably be 15 minutes? Not long.

Witsender the dimensions are 33x31x32 cm (13×12.2×12.6 inch)

Slow cooking is great, I'm told, but haven't done it myself yet.

Feel I don't think it will be too big. Unlike slow cookers, which need liquid to a certain level to cook things, you only need enough water to make the steam which pressurises the pot, so you can cook smaller quantities as easily as larger quantities.

I feel it does take a lot of cupboard space but mine tends to love on the work surface as I use it so much.

feel. I've used it just for a couple of boiled eggs and it works just fine woth small quantities.

I keep mine on the worktop too as I use it almost every day. My favourite Mushroom Risotto Recipe for two people:

Sauté a chopped onion and some chopped mushrooms in olive oil until onions soften a bit
Add 1 cup of risotto rice and stir until coated
Add about half a cup of wine and stir until evaporated
Add two cups of stock, set to manual - 7 minutes
Release pressure as soon as timer beeps
Stir in parmesan cheese

It's really good and you can vary the flavours.

But lougle what if it's not done at the end and you have not wholly cooked chicken - how do you get it back up to speed and cooked without using the oven?

Piglett in that situation you just put the lid back on and give it another few minutes. It's all all poodle slightly annoying because you have to wait for it to pressurise again, but you'd probably only need another 5-10 minutes.

notapizzaeater - 1.5 cups of water in the bottom, trivet, then the cake tin sits on the trivet. So the water doesn't get into the bottom of the tin. You can also put a layer of foil around the outside of the tin if you worry.

There's a lot of buttons. I'm not good with lots of buttons. My microwave has lots and I haven't used anything but the timer and the start button.

You don't have to use all the buttons! To cook my cheesecake I had to press 'Manual', and then press and hold the '-' button until it said 25. Then at the end, I pressed the 'Keep warm/cancel' button. 3 buttons.

I got an IP Duo for Xmas too. W have a family of 6.
So far have made porridge, steamed veggies, done a pot roast and cooked a whole chicken with it.
Then made stock with the carcass, which I'm going to use for soup.
I am going to do macaroni cheese in it tomorrow.
I am waiting for a steamer basket to arrive and am stupidly excited about it.

I can see some people are having problems with porridge.
I put a small pyrex bow l(had to buy one especially :)) on the provided trivet with half a cup of rolled oats and a cup of water in it, put a cup of water in the bottom of the cooker, put the lid on, give it 6-7 minutes on manual ( experiment!) and leave it 5 minutes before venting manually. Have made 2-3x this amount using the same setting but obviously proportionally more oats/water in the bowl.

Another fan here - had mine 6 months-Ish

They seem daunting at first but you quickly get the hang. Did ham using the slow cooker function on Christmas Eve and then flipped to pressure cooker to par boil the roasties on Christmas Day - super useful

My raspberry cheesecake went down very well at my friend's 'non-stop chili' day. Nobody could believe that it was made in a pressure cooker.

Last night I tried my lemon cheesecake - it's delicious! I used the recipe up above, but then added the zest of two lemons and the juice of one lemon. Then I started to make a lemon syrup, but converted it to lemon curd by adding butter and then letting it cool a little before whisking in an egg and letting it thicken over a low heat. I swirled the lemon curd into the cheesecake mixture before pressure cooking it.
