In ridiculously sad excited. I got given an Instant Pot Duo 60 for Christmas and it is utterly fantastic!

I cooked a cheesecake in 25 minutes. It's delicious. Then I pot roasted a 2kg joint of beef in 45 minutes -beautifully tender and still just ever so slightly rare in the middle.

Am salivating here! Don't love cooking, work full time with 3 dc and plan to start eating less carbs and more meat and veg- this should help time and prep wise right?

Threw out my 10 year old PC before Christmas and feeling this is the replacement!

So do I order via Amazon prime now and have it here in 2 hours (£100) so I can batch cook this afternoon or go for the good housekeeping offer and wait?

'How exactly do you no natural pressure release?'

I just turn the machine off and wait. Sometimes set approx time on alarm to alert me, then try and open lid. The lid won't open until the pressure has been released and it is safe to do so. Don't know if there is a better way of doing NPR.

Ahhh I see. So basically you do nothing. There is no button to press.

Mine is now with Paul, who will deliver mine in approx 20 minutes to one hour Grin

Yes, do nothing, no button to press, just wait for 10 or so minutes until the lid allows you to open it.

The machine has a great feature where the lid slots into a handle on the top and side of the pot so that it rests in this handle slot and doesn't take up room on your kitchen top by having to be placed on your work area.

It is here and I just did the test run. I have to admit I was scared it would blow up on me! I breathed a sigh of relief when the valve popped up.

I now need to decide what to cook for tonight.

Just home and mine has arrived!!
Got the shopping in, lots of chicken and mince.
No DC in the house til 7pm so plenty of time to get to try out instapot!

I've got black beans in mine now, doing the replacement soak thing. More as a trial than anything else. I admit I've never pressure cooked before so it's a new departure for me. And a bit scary!

If I wanted to cook celeriac in it to make mash, how would I do it?

I bought an IP and it arrived just over a week ago, I haven't been well so hadn't used it till today (but dh is a total convert and has used it almost daily).

I have just cooked dried chick peas in 45 minutes - might not seem much but how brilliant is that?! Going to make humus when they've cooled down.

It was perfect. The chicken was so tender and the rice was perfect. I prefer Delia's recipe for taste but this was similar and cooked better. I didn't want to follow a recipe that wasn't for a pressure cooker on my first go.

Dh who sneered at the idea has been converted.

Now I need to learn how to cook every day recipes in it as I don't want to keep following limited pressure cooker recipes.

It took longer to cook the cheesecake than I expected so I put it on for an extra 5 mins at the end. Fingers crossed! The water in the bottom of the pot was a little buttery after cooking, presumably from the base so I hope it's not too soggy.

The risotto was a triumph. I think I cooked it a little too long but I chucked in some extra wine and butter at the end and all good :)

I'm now about to batch cook some filling for cottage pies.

Oh you are all doing brilliantly! I've just finished 2 nights so I haven't done anything. Currently on the sofa under 2 blankets, trying to warm up!

Just made a Thai green chicken soup in mine. Bit of oil, chicken bits and brown on sauté, chucked a few spoons of Thai green paste in, then a few chicken oxo cubes in a bit of water. Load of veg, carrots, spring onion, baby corn, leek, courgette, green pepper - been shopping so needed to use up all the older stuff. Bunged it on soup and then half a can of low cal coco milk in when it beeped. Was amazing Grin

Thai soup sounds amazing. How much liquid do you add? I'm a bit confused about how to gauge liquid.

Can someone please explain to me how I adjust recipes to suit the pressure cooker?

If I wanted to do a filling for cottage pie how exactly would I do it?

I am having a hard time getting my head around that part, adjusting normal recipes.

I am loving it! Made rice yesterday (to make egg fried rice later) and worked beautifully.
Made Mongolian beef to go with it - OMG the flavour! It really does intensify the flavours,it was actually a bit too strong, will reduce the soy sauce next time.
Today made cauliflower and blue cheese soup, and later a nice hearty lamb stew with dumplings, which was again so full of flavour it was amazing, and the lamb was really soft.
I am well and truly sold, absolutely brilliant gadget.

U2 as far as adapting recipes goes, I'm not really......I'm just ensuring whatever I cook has enough liquid in so it won't stick, then thickening at the end. And leaving any milk or cream until the end too.
So for shepherds pie for example, I'd make as normal - Brown the meat and any veg using the saute function, then add a bit of stock so there's liquid, pressure cooker it then thicken at the end with cornflour and/or reduce the liquid with the saute function.

I made chinese pork belly tonight. It was delicious, but overcooked. I had given the (frozen) pork belly 35 minutes -it was beautifully tender. Then I sliced it and put it back in with vegetables for 15 minutes. It was delicious but the veg was far too soft.

Next time I'll do 25 minutes, QPR, veg in, 5 minutes, QPR.

My slow cooker has died (probably of jealousy as I've been reading this thread) and I'm considering an instant pot.
Is it worth paying the extra for the 7 in 1 instant pot compared to the 6 in 1?

The 7 in 1 is £99 with the code gf157 plus free delivery, an extra seal and free mitts. I think that is worth it. The 7 in 1 has the yoghourt making feature. Haven't tried that yet, but it sounds good.
