In ridiculously sad excited. I got given an Instant Pot Duo 60 for Christmas and it is utterly fantastic!

I cooked a cheesecake in 25 minutes. It's delicious. Then I pot roasted a 2kg joint of beef in 45 minutes -beautifully tender and still just ever so slightly rare in the middle.

When my slow cooker dies I am definitely buying an Instant Pot to replace it. I might have to throw it around the kitchen a bit just to speed up the process.

meatballs and tomato sauce last night (5 mins on high then natural reease) plus cooked up some apple for crumble. Next time I will put less water in with the apples and cook for 1min on low rather than 2 mins on high. I am going to presteam some potatoes today for jacket potatoes tonight and finish off in the oven.

I want to attempt a risotto. What's the best way to do this? I'm a bit worried about the stirring (or rather the lack of).

I noticed a pp mentioned risotto. Potentially this could save me about 6 hours a year Grin

Risotto is sostenuto m apparently very easy and takes 4 minutes!

I did the potatoes for jackets thing Reed and thought on balance microwaving the spuds was easier and quicker. I finished both off in the oven.

I'm going to try to find a risotto recipe :)

I finally tried mine out tonight. Made my old pressure cooker favourite potato hash with corned beef. Worked really well.

I picked up my IP today (was very upset yesterday that it had been taken to the post office which was closed!) I've done the water test and I had a bag of butternut soup mix in the fridge so I'm giving that a go.

It smells disgusting though - I'd forgotten that butternut smells a bit funny when raw. I'm in the early stages of pregnancy at the moment so really noticing it!

This Risotto recipe really works!

Recipe for two people:
Sauté a chopped onion and some chopped mushrooms in olive oil until onions soften a bit
Add 1 cup of risotto rice and stir until coated
Add about half a cup of wine and stir until evaporated
Add two cups of stock, set to manual - 7 minutes
Release pressure as soon as timer beeps
Stir in parmesan cheese

It's really good and you can vary the flavours.

I made the lemon cheesecake tonight! It's cooling in the fridge and unfortunately I can't try it till tomorrow. It was easy enough to make, and had a bit of water on top when done which I blotted off. If it is edible I will post the recipe - think it is the same one Lougle posted earlier.

That sounds lovely CatCoriander I might try that tomorrow, although I don't tend to have wine in the house - but I suppose I can just use more stock instead.

The butternut soup was delicious. I'm going to have a go at making it using the timer function next time I'll be home late. Then all I'll need to do is blend it when I get in.

Can I ask how the pulled pork was done?
I did pork shoulder the other night - texture was great but I didn't flavour it well enough, it was a bit meh. What should I have done?

the risotto recipe looks good thank you! I might try that next week. I used to microwave spuds before finishing off in the oven but our microwave is playing silly buggers and keeps cutting out. so 12 mins in the ip is easier for me than 15 mins swearing at the microwave as it cuts out for the nth time!

Tried porridge this evening as test run for mornings. did pot in pot method with rolled oats and water. prefer with milk or half and half so will try that next time.

Can anyone explain the pot in pot method please, also for some reason mine didn't come with a trivet. What does the trivet look like and what could I use instead?

It's a smallish round rack. Did you get it from Amazon or direct from instant pot? I'd contact them and ask for one to be sent to you. pot in pot I've only done once so I'm no expert but instead of putting whatever you're cooking into the metal pot, you put an ovenproof dish containing your food onto the trivet and then a cup or 2 of water in the base of the big pot.

Cheesecake is lovely! Perfect texture and I adjusted the sugar so it wasn't overly sweet. However I am a bit sad that the digestive base didn't crisp - although very obvious why it hasn't as it has been effectively steamed! I would definitely recommend making it though as very easy.

I adore mine; have had for 6 months and I use it every single day.

I'm particularly pleased with the yogurt (I do vanilla greek) and the soups/pulses. DH and DS also have pinhead oats porridge every morning (pot within pot method pressure cooked) and they love it.

I also find most things taste a lot better pressure cooked; I think someone described it as a slow cooker on speed, which kinda makes sense.

I still haven't tried a cheesecake though, might go for it this weekend!

Love all these ideas! Next week I'm planning cheesecake, beef stew, meatballs and I'm going to give porridge a go (have never been able to crack it in the slow cooker). Feeling optimistic 😀
