Perfect chips of course require cooking in dripping or lard. Agreed with the perfection of Black Country Museum chips (and Yorkshire chips), and the crapness of SE chips and chippies in general. Where are the scollops????

I remember my dad keeping a battered pan under the sink that was full of Lard. He'd buy three blocks, pit them in and melt them down and then just put the lid on till needed, changing only when it stopped cooking the chips.

Haha yes! I shudder to think of the content of those bowls but they made egg and chips (and yorkshire puddings) to die for! Veg oils just aren't the same.

My family is from Coventry so I wonder if dripping is more northern and lard is more midlands?

Also pan of reusable lard in my childhood house. The basket would be left in it too! Mum had a crinkle chip slicer, made fab chips as the salt would collect in the crinkles.

Has to be cold ham, hot fried / poached eggs, and crispy chips with ketchup. And white bread and butter on the side and a huge vat of tea.

Gosh, years since I've had egg & chips.

Chips made with King Edward potatoes cooked in lard, runny eggs, white bread to dip and lashings of mayonnaise.

And we knew all along that lard and butter were better than poncy oil. Smile

(Duck eggs make the best baked custard going, luck you to have some!)
