Just that really. We have 2 friends coming for dinner tomorrow night and its the last time I see one of them before she returns to the US. There are 4 of us total. We don't drink. I think thats reasonable for a main and desert for the 4 of us but DH thinks I am stingy and we should do something fancier. What do you think?

As someone whose done a few dinner parties I think your guests would find it a tad odd to have a vegetarian meal if they aren't veggie and you haven't said beforehand that you are doing a veggie meal.

Just because you are on a diet you shouldn't impose that on guests, imo that's a bit rude.

Also I'd do at least 3 course.

A soup course is an easy addition.

Or offer biscuits and cheese after dessert?

Have you checked if they like stuffed aubergines? It's quite an all or nothing meal. What if they don't like one of the ingredients? They can't exactly pick it out.

From experience I'd say that dinner parties work best when guests have a little choice in what they eat. We find things like tapas or Mexican works quite well as people can choose what parts of it they want to put on their plate.
