To use one chicken breast to feed two adults?

Or expect two chicken breasts to feed us both, twice?

They are proper breasts, full sized, not 'portions'

I was going to use one for fajitas, and one for curry. DH does have a healthy appetite but surely this would be enough?

I am trying to cost cut. I'd normally use two for each meal.

One's probably enough for fajitas if you bulk out with a lot of veg and sauce, the tortilla itself is quite finish. Not sure 1 chicken breast would be enough for a curry though, that's a bit tight.

Depends on how big they are really, I probably would to save money, but would bulk out the rest with lots of veg, lentils, beans etc.

I would have thought one breast between you would be enough as you have other stuff to go with it. If it was just chicken on its own then I would have one breast each.

that's fine. I do it regularly. Curry can be bulked out with veg easily enough (chickpeas and cauliflower usually, in thuis house), and same for fajitas.

Plenty, chicken breast is expensive.
For curries & casserole I use boned thighs, just as tasty & cheaper for slower cooking.

Try turkey breast, it's miles cheaper and does the same thing.

I think you're expecting a bit too much. One chicken breast to do 4 meals? I couldn't do it, but apparently on MN you can.

Of course. 2 chicken breasts are a lot once with carbs/ veg and sauce.

For x2 adults and x2 children we use 2 at a time.

Fajitas here have pepper, red onion, tomatoes, avocado, sour cream in. plus the chicken. Usually with side of chilli corn on cobs

Forget that. I've just seen that it's 1 chicken breast for each meal. It's just about possible I guess.

Depends on where they come from
2 from the butcher does 2 adults, 2 kids, and my lunch the next day.
2 from tesco does 2 adults.

How about dropping to 3 to do 2 meals for 2 ie 1.5 per meal or 3/4 each initially to see how you go - baby steps!

Or use chicken thighs in the curry.

I will bulk the curry out with veg.

These are quite large. They are in fact a bit big for eating just as chicken, for me anyway. I do chicken wrappen in bacon and one of these is quite a lot!

Although I normally use two for the curry but do end up freezing a portion so should be fine i think.

Chicken breasts really vary in size. Supermarket piddling ones would only feed one I reckon, but the whoppers I get from my butcher feed two no problem. So if they are big ones, YANBU

They're from sainsbury but the meat counter ones so as i said, a whole breast. I notice a lot of the ones you get in packs are tiny and have a straight cut edge - where they have been cut in half i think.

Butterflying it and bashing it a bit can make it look a lot bigger, plus it cooks faster.
Not sure it would be enough in a curry but you can add so many things to curry to bulk it out, you could even use Quorn chicken bits to make it seem to contain more chicken!

I do this whenever I am cooking. DP will use a breast each and there's always so much left over, but then I don't eat much chicken so it balances out that he has about 2/3 - 3/4 of the breast and I have the rest. I find chopping it into smaller pieces makes it look like there is more there, rather than keeping it in very large chunks. In 13 years of us living together, he hasn't yet sussed that I do this Wink *

*I am not keeping this from him as a big family secret by the way - unlike the time my mum fed my dad dogfood Grin
