To use one chicken breast to feed two adults?

Or expect two chicken breasts to feed us both, twice?

They are proper breasts, full sized, not 'portions'

I was going to use one for fajitas, and one for curry. DH does have a healthy appetite but surely this would be enough?

I am trying to cost cut. I'd normally use two for each meal.

agree that turkey breast is loads cheaper, and does the s ame job (and tastes nicer, imo) but see that you have these already.

I usually use 2x chicken breasts to make a curry, but we eat half/save half for another time (2 adults, 3 children), so one breast would make enough for one meal for us all.

Par for the course in our house. Our fajitas include onions and pepper and are served with lots of sides. Chicken curry normally has a can of chickpeas and lots of frozen spinach bunged in.

We are not strapped for cash; I just thing veg adds to the flavour and nutritional content of a meal.

One chicken breast per meal should be plenty if you bulk it out with lots of veg.

Even better, don't buy chicken breasts at all. Buy a whole chicken and cut it up - I bought kitchen shears just for this job. Once you have tackled a couple it only takes a couple of minutes to chop a whole chicken into the freezer.

A pack of 2 chicken breast often costs the same or more(!) than a whole chicken. So we cut a chicken into thighs, legs, wings, breasts, freeze back into bags of each type. Legs and wings get smothered in a variety of sauces, BBQ style. Thighs get used in stews and thigs like fajitas, burritos etc. Breast get used for salads, we like chicken, pesto pasta, for example.

I also chop the carcasse flat, freeze them in 2s and make stock out of them - roast off when using the oven for something else. Pop into a stock pot with knackered veg (which I also freeze, sorry) and bob's your stockpot soup. Strain it and add soup pasta or noodles, spring onions, some spicing, like thai for example, and a poached egg... we call that egg drop soup, cos you make stock and then, erm, drop an egg into it Smile

I'm sitting firmly in the 'no way' camp, but I can see I'm in the minority!
For chicken fajitas though, I use thigh fillets as they have a flavour. I find breast meat very bland. And for the same reasons, thighs and drumsticks in a curry. Lots of them!
In fajitas for the 5 of us, I'd use about 8 thigh fillets, possibly more if they were small.

I often do this, or buy turkey breast mince for curries. Can't tell the difference.

I am in the middle and use 3 between 2 - I find 1 too stingy (though possible) but 1.5 tips the balance.

On a day-to-day basis, I aim for meat portions to be about 100g/person and fish portions, 150g/person.

I buy my chicken breasts from my local butcher's and they are huge (typically more than 200g per breast) so yes, for me, one breast will feed (at least) two people, and possibly a bit more if it is served in a curry with vegetables and rice.

I think a lot of people (who have sedentary jobs) have lost track of what an appropriate portion size should be.

I do 3 breasts between 4 for fajitas but couldn't imagine 1 between 2. I prefer thighs as well but have noticed them gradually getting more expensive. Not the cheap alternative they once were. Thanks

The breasts aren't dry or flavourless. I agree thigh meat has more flavour which is why i use the breasts for curries and spicy fajitas.....

we just had a chicken breast each...butterfly cut, bashed a bit, covered in mayo and breadcrumbed. With salad and a few chips...teen ds had no salad, a mountain of chips and bread and butter.

I usually egg and breadcrumb, but this was much much nicer!!

I'd maybe use less for fajitas/curry but these were not giant, so halving them would have been stingy.

I used 4 chicken breast s to batch cook 3 curries for me and dh yesterday. They werent massive or I'd have stretched to 4

He'd be horrified and would only have got 2 out of them! (Don't tell him!)

For a chicken dinner I would use one each though

I go roughly by weight and bulk with veg. Yes i'd use 1 breast between 2 and bung in a can of chick peas, some cauliflower, a can of chopped tomatos, onion and probably green beans.

If you need to cut costs then yes, I guess you could. Add plenty of other stuff such as veggies to make it go further - though often veg is just as dear at times.

But generallly I would always allow 1 chicken breast per person. I would only really share one between two rather young children.

100g of meat is fine for a portion with carbs (wraps and rice) and veg.

Seriously, do people normally eat 200 to 250g of meat at a time? Like Rattitude up thread I go for about 100g per person. Have just done bolognese pasta bake with 500g mince for 4 adults one child. We are all stuffed.
