I was double checking how much bread I needed for bread sauce.

So I looked under bread. Nope.

I looked under sauce. Nope.

Finally looked at the menus at the front, noted it was called Traditional Bread Sauce so looked under T.

Yup.

Seriously?!?!?!

Well...AM I!?!?!?!

Bread sauce is a creamy sauce made with milk infused with peppercorns and onion, with stale breadcrumbs mixed in. I love it.

My husband would leave me if I didn't make it, SDTG. I can take it or leave it.

Ninja it takes hours to make. But it does smell nice.

Oh, SDTG do you know...can you infuse ahead and let it sit until the next day? If I could do that part on Christmas Eve...

I remember my granny having bread sauce.

She had really nice pottery jugs. White with dark green insides.

I never ate it though.

What do you do with it? Is it like gravy? Or more like a 'dip'?

And do you have it with gravy or instead of?

I can now report there is, in fact, nothing under D for Delia.

There is, however, under Traditional:

...braised red cabbage with apples
...bread sauce
...English trifle
...roast pheasants with Madeira gravy and bread sauce Xmas Shock
...roast turkey

It's like the laid out the book using Word and just let it take the recipe headings!

No, that's bad indexing. Sounds like the publishers were cutting corners (indexing is still pretty hard to automate and good indexers are expensive)

Bread sauce should be under at least sauces and bread, as you say!

I made delia's traditional Christmas cake one year, and made the mistake of following the instructions sequentially without reading ahead.

instruction 1 - pre heat oven to x degrees. Check.
Instruction 2 - grease 9 inch cake tin. Check.
instruction 3 - soak dried fruit in brandy for 12 hours.....and do what, pray tell, with my bl**dy pre heating oven during that period????

moral of the story - read ALL the recipe first . unless you are happy to have a very warm kitchen and spectacular gas / electric bill.

OFF TOPIC but badgers please do not give hedgehogs bread and milk, its really bad for them!! it gives them a poorly tummy. if you want to feed them, a meat based dog food is by far the best thing.

Lots of people feed hedgehogs with bread and milk, but I've heard this isn't good for them. What's the real story?

You are right - milk and bread is not a good or healthy diet for a mammal that is carnivorous and can be fatal to young hedgehogs! The fact that your hedgehog laps up any bread and milk left out for it doesn't mean it is a good thing to feed it, any more than sweets are good for us, no mater how much we like them! Cat food (non-fish varieties only) and water is a far better way to keep the hedgehogs in your garden fit and healthy.

Mary Berry has bread sauce indexed under bread and sauce. She also says you can freeze it, thaw over might and gently reheat, whisking in a little extra milk if needed.
