As a result of the No Sugar thread, I have realised that I can't cook. Not one bit. No siree.

I need help.

These are the rules:

  1. No cheese of any kind.
  2. No meat
  3. Not more than two pots for any one dish
  4. Mustn't take hours
  5. No cheese.

Thank you please help me.

Easiest veggie chilli ever

Chuck the following in pan; stir and heat:

Tin or two mixed beans
Big jar tomato sauce (Seeds of Change one nice) Or make your own Grin

Chilli to taste ( lazy squeezy chilli good)

Lots of chopped fresh coriander.

Serve with pittas or wraps; sour cream or yoghurt; guacamole, etc. Or just by itself.

I made http://www.bbcgoodfood.com/recipes/1898646/mushroom-stroganoff this the other night really easy took around 30 minutes I substituted the sour cream for cream and just used whatever mushrooms I had. I do find quite a few good recipies on 'whispers' netmums another website.

I also make my own stock. I'll use it in a courgette risotto tonight.

That has no meat. But three pots including the stock pot, two hours minimum to boil the chicken bones, 30 minutes stirring time and lots of cheese.

Beans on toast? I put cheese in mine but it's not compulsory. You may however be spooked at the amount of hidden sugar in baked beans.

Egg fried rice:

1 sachet of the micro basmati rice (brown or white)
Variety of veg all chopped the same size (i use 1 red pepper, 1 carrot, 1 onion - you could use a frozen mix - not sure what's out there)
cup of frozen peas
2 eggs
Protein (cubed cooked quorn, frozen prawns, leftover cooked chicken, pork, ham - not beef or lamb)
Garlic and ginger (use a teaspoon of the lazy stuff if wanted)
tsp oil (veg/sunflower)
tbsp light soy sauce
tbsp Sweet chilli sauce
(1 red chilli chopped - optional)

In a large non stick wok/pan fry mixed veg, garlic & ginger (& chilli if using) in the oil for a few mins. Beat eggs in a bowl. Heat rice for 2 mins in micro. Stir in protein (if using) cook/heat thru for a couple of mins. stir in rice and soy & sweet chilli. Push all the ingredients to the side of the pan and turn up the heat, tilt the pan so the bare part is over the heat. Add whisked eggs to the bare part of the pan and let set, stir it up so you get quite stiff omelette/scrambled egg NOT mixing in with the other ingredients (this bit takes some practice - if easier you could do the eggs in a separate pan and stir them thru) . Stir it all thru together. serve. Feeds 2.

Should take about 10 mins. We always have this on a monday after roast chicken or pork (but if you are veggie it is good with or without quorn)

Wild mushroom pasta - easy, takes about 15 minutes.

2 red chillies - chopped and deseeded (unless brave and hardened of mouth)
Clove of garlic - squished and chopped
Mushrooms - lots of naice ones, not the white button ones with no flavour. (bleurgh)
Handful of flat leaf parsley - chopped a bit
Pasta - enough
Olive oil - few hefty slugs (its got to lubricate the pasta as well as fry the 'shrooms)

Must admit I tend to use garlic olive oil as garlic AND olive oil is too complicated for me.

  1. Fry the chillies and mushrooms in the garlic [and] oil
  2. Boil pasta
  3. Drain pasta when cooked.
  4. Chuck drained pasta into mushroom mixture
  5. Sling on chopped parsley, stir it up
  6. Plunk into bowls

Nice with salad.

I thought the parsley was just for show and tried it without. It's not half as nice.

I add parmesan at the end too except when feeding my vegan friend or freaky people who don't like cheese Grin .

Two pots, plates, forks, one slotted spoon, one sharp knife and eat the salad straight from the bag. Luverly.
