Morning Quichettes

I'm sorry, only just seen your post to me

Ingredients - serves 6 (or one if you're like me!)

100 g brown sugar,
1 pinch of salt,
2 litres cider - I use something like Katy Apple Cider which is 7.5% but as long as it's a traditional cider (NOT Magners/Bulmers) it doesn't really matter, use one you like.
1 tbsp of dark rum.
1 tsp ground allspice
1 tsp whole cloves
1 pinch of nutmeg
2 oranges, for the peel only.
6 cm cinnamon sticks

Method

1. Combine the sugar and salt, and add to the cider in a large saucepan.

1. Grate the zest of the oranges into the cider and if you want to add a touch more sweetness, squeeze one of the oranges into the pan.

1. Tie the spices in cheesecloth (or similar, new J cloth works just as well, but don't use the one you clean the loo with...... you do clean your loo, don't you? ) and add to the cider. Slowly bring to the boil. Cover and simmer for 20 minutes.

1. Remove the spices and add the cinnamon sticks and toasted before serving in a punch bowl.

1. Invite Mouse round to sample your work!
