What I don't understand is that surely at some point, he is going to eat the veggies? Seems a bit brutal to spend months singing to them and then to chop them up and boil them.

Well I have to say that as my youngest is 10 I had no idea who Mr Bloom was but thanks to tougholdbird posting that ceebeebies link I have a new guilty secret! Wouldn't mind giving him a hand with his sprouts and parsnip!
