Food left out overnight - bin or not?

Dazedandconfus · Yesterday 12:05

I think it maybe needs to go in the bin but…
Made quorn bolognese last night - finished cooking at 7pm and left to cool. Transferred into storage container and lid on, but forgot to go back and put in fridge.

So left out in the kitchen which was maybe down to 15 degrees overnight.

Plan was to make it into lasagne today.

Would you chuck and start again? Google suggests I should 😢.

I would use it.

Pansykavalier · Yesterday 12:06

It'll be fine - just make sure it is heated through and through.

Lovelynames123 · Yesterday 12:07

Meat maybe not but quorn, yes. Just make sure it's heated to over 75° when you re-cook

user1471538275 · Yesterday 12:08

It's going back into the oven for quite some time as Lasagne so it will be hot through.

I would definitely use it.

Basilandparsleyandmint · Yesterday 12:10

I am quite cautious with food so I wouldn’t use it. I did similar last week with a meat based chilli. I was so annoyed at myself.

DuckFilledPlatitude · Yesterday 12:11

I would use it, but I am quite reckless about that kind of thing.

DoloresDelEriba · Yesterday 12:13

Quorn will be fine. Boil it up again before you make the lasagne.

morbidcuriosity · Yesterday 12:14

I would use it yes.

RedRosie · Yesterday 12:14

Yes. It's quorn. It's not an especially perishable thing (Frankenfood!). I'd be much more careful with meat.

Itsasecretnow · Yesterday 12:17

Agree with majority, it’ll be fine to go into a lasagne. I’m not so bothered if I leave vegan/veg based things out overnight (I do have quite a cold, unheated kitchen though), but would obviously be far more strict and careful with anything meat based or with a lot of dairy in. You won’t die. You might wish you had if we’re all wrong though 😁 But, seriously, yes, heat it through thoroughly and you’ll be fine.

Wildfairy · Yesterday 12:21

No, people think as it’s not meat it should be fine, but above four degrees and it grows spores and harmful bacteria.

its a really common misconception that cooking it kills the bacteria, it doesn’t thr toxins are heat resistant,

don’t get me wrong, it might be fine, but quorn once cooked is just as risky as meat,

You do realise that there was a time when not every household had a fridge, yet somehow the human race survived.

Nourishinghandcream · Yesterday 12:41

Definitely would.👍

Individual survival and not being incapacitated by food poisoning are perfectly legitimate goals.

Um you do realise no one is saying it will kill her lol, and that food poisoning was much more prevalent then. Much more, and that quorn wasn’t developed til the 60s?

😂

Somnambule · Yesterday 12:49

Yes I wouldn't give it a second thought.

Dazedandconfus · Yesterday 12:57

Thank you everyone. I think as it’s just me and DH and I can heat it again and then it will be in a lasagne so in the oven for a while I’ll probably chance it 😊.

So cross with myself. I remembered this morning, and hoped it was one of an increasing number of things I’d just forgotten I had done, but sadly I really had left it out 🤣.

I do this routinely and never make anyone in the family ill!

Me too. People survived for millenia without fridges.

Itll be fine.

I'd use it

Name me one single person who has survived for millenia.

Quorn (mushroom) is high protein and high protein foods have a higher food poisoning risk. At home, I would eat the quorn (although our kitchen drops way below 15oC overnight at the moment) but at work I would be breaching my food hygiene training if I did this.

Shoobadadoo · Yesterday 21:27

I do this stuff all the time!!! Never ill. I wouldn’t do it with prawns or pork. But red meat absolutely!!! Have left beef out overnight at least 8 times and we just eat it the next time heated through

20centurySteph · Yesterday 22:07

I mean for home use I would totally do it. Especially since it being reheated/ consumed immediately. If I were working in a professional kitchen, following their rigorous and super cautious food hygiene rules, I would have to toss it out if it’s been out.
It doesn’t necessarily mean it’s unsafe- hygiene rules are meant to eliminate the risk of food poisoning to as close to zero as possible. Using food outside the strictest rules increases the risk slightly- acceptable, IMO, if I’m eating it, less so if I’m feeding hundreds of people commercially.
