Vegetarian meal ideas with only a microwave and toaster for three weeks

I have no cooker for the next 3 weeks while our old kitchen is (well overdue) being ripped out and redone.
I have a microwave and toaster... that's it. Other than living on beans on toast , can you all help me with ideas/recipes that dont need an oven, hob or grill?!
(Im also veggie but I dont think that makes much of a difference) Im not creative with food at the best of times!

when I did nightshift, i would microwave or of those veggie bags from a supermarket and have a sachet of sweet and sour stir fry sauce. It was lovely. You could do an equivalent of that. You could also get microwave bags of rice.

Baked potato. Not great in the microwave but will make a change.
Tinned soup.
Some people say scrambled eggs come out ok
Otherwise... salads. Or Pot Noodles.

Are you planning to batch cook? If so, make a load of chilli, bolognese, shepherds pie filling, pasta sauce (all vegetarian of course) and freeze in portion sizes.
Serve with microwaveable rice, fresh pasta, ready made mash. Have frozen peas . Sweetcorn etc on the side.

I would have batch cooked a load of lasagna, lentil cottage pie, curry etc to tide me over.

I’d also, if I didn’t have one already, buy a camping stove, the type that runs off the little gas canisters, they are really cheap and means you have a lot more options meal wise.

Get a cheap air fryer and then you'll be able to make most regular dishes again. Mine was only £29 and it's amazing.

How many people are you cooking for, and is it dinners only or breakfasts/lunches too? I would also say you can pick up an airfryer for around £30 which will vastly increase your options

I second this. I was about to suggest getting an air fryer as well. That will take care of a lot foods such as halloumi, quesadillas, roasted vegetables, etc.

Buy a little plastic omellette maker. Pop in the microwave for 3 mins. Yummy.
Baked potatoes.
Ready meals.
Or those little toasted sandwich bags that go in the toaster.
Make a chilli to have with jackets or pre packed rice.

Packets of rice, flavoured, then mix up with cheese, tofu, veg, eggs etc as it fits

The tubs of flavoured bulgar wheat in delis, Turkish shops etc, also nice with cheese. I eat a lot of cheese to be honest

Salads, cold new potatoes, green beans you can microwave.

If you eat processed veggie fake meats, then you can warm those up and chop that up in salads.

Buy a cheap airfryer. Far more useful than a microwave!

Roast vegetables and hummus / halloumi in pitta pockets. Aisoan style dinner - soak noodles in hot water and add to steamed / microwave veg with soy sauce. Mixed veg and pasta and a stir in sauce. Microwave veg and new potatoes, cook a veggie burger in one of those toaster pockets and chop up into a pasta dish. Pouches of lentil (merchant gourmet ones are nice) with some extra vegetables to make it a better meal.

Get some cooked pasta with sauce pouches DD took them camping and are ok.

I would consider buying an air fryer too.

You can also make a cake in a mug in the microwave if you want something sweeter! Plenty of recipes online including treacle sponge

Another one recommending an air fryer. We were without a kitchen for 8 long months and we used the air fryer for cooking far more than the microwave.

theres tasty lentils in pouches etc in the world food aisle, the paneer tikka masala went in large quantities with my dd to university. Canned taco beans, grated cheese and salad in a wrap is another great option

The packets of flavoured couscous are made up by just leaving to soak in boiling water for about 10 minutes. The sun-dried tomato one is gorgeous with diced cucumber, red pepper and crumbled feta.

Looks like I need to get an airfryer then😁
Mostly it's just me and my husband, my son at weekends, but I also have the grandkids 2 days a week. I wish Id had the foresight to batch cook, but I didn't (other than loads of pasta sauces and veggies from my allotment)

I suspect dh will be happy to have an excuse to buy one !

All supermarkets do tins of ‘taco beans’ in a spicy sauce. They’re fine for microwaving and serving in taco shells with some grated cheese, sour cream and guacamole.

Microwave rice + veg curry (either homemade in advance & frozen; or ready meal)
Scrambled egg on toast
Soup & toast

Buy toastie bags and you can do toasted sandwiches in the toaster (I've re-heated pizza slices in toastie bags too).

You might be able to make shakshuka in the microwave too (ready made tomato sauce, warm in the microwave then poach eggs in the tomato sauce in the microwave).

M&S do some nice soups in their chilled section.
Mixed beans and veg stew (might not be amazing in a microwave but it'll be ok i think). Or mixed bean wrap.
Some really nice sandwiches
Avocado on toast, banana on toast, boiled eggs on toast (I think you can buy pre boiled eggs?) Microwave cheese on toast, hummus on toast.
Cous cous.
Microwave rice packets (there's some nice flavours) with simple veg curry.
Eat out a few times.

I make risottos in my microwave, you can also cook pasta ( I use my veg steamer) in the microwave so easy to make pasta with a vegetarian sauce. Have also made shakshuka as another pp said. Buy frozen Mediterranean veg, cook in microwave and serve in wraps with houmous.

lidl do microwave sachets of 3 bean chilli, it’s high in protein and really rather good with microwave rice and grated cheese!
