What’s your favourite low effort but delicious and nutritious meal?

DH is out for dinner tonight and I am envious because I LOVE eating out.

I want to eat something that feels a bit more special but doesn’t take ages to cook. I’m lacking in inspiration and don’t actually know what I want to eat.

What would you have?

So far I have considered chicken souvlaki with pitta and Greek salad, steak tagliata, baked Camembert with veggies and baguette…

For me it’s letting the produce do the talking…

Bruschetta type dishes - chunk of lovely bread, either braised veg (yesterday was leeks, peas, spinach with a bit of feta); or classic tomato, mozzarella, basil/pesto. oyster mushrooms are great at the moment too.

Ploughman’s type plates / charcuterie - getting a really good selection from the deli, and nice fruit / crackers alongside.

Though depending on my mood, I might also use the excuse for my guilty pleasures of pre-made lasagne/kievs, with side salad, or even a chicken or beefburger - again with a nice bap, excellent sauces, etc.

Chicken bacon and avocado salad. Lots of good nutrition in there but equally delicious and satisfying as a bit of a treat 😂

The emphasis is on the quick rather than the nutritious, but it is flipping gorgeous,

Fusilli pasta, red pesto, mixed beans, chopped tomatoes and onion. Sprinkle cheddar over the top and whack it in the oven for 20 minutes.

I’m also going through a phase of club sandwiches.

Pita bread filled with salad, crispy bacon and a dolphin of creme fraiche.

Smoked haddock and rice, put in a pan and cook in a mix of water and orange juice.

Greek sheet pan Chicken.
Chop up peppers, courgettes and red onions and place on a baking tray Add cherry tomatoes. Nestle in some chicken and pour over a mixture of fresh lemon juice, olive oil, dried oregano and minced garlic.
Crumble over some Feta and bake in the oven for around 45 minutes or until the chicken is cooked.
I either eat as is or shred up all the chicken and stir everything through Pasta.

I heard quick and delicious and my mind immediately jumped to tuna macaroni, made with condensed tomato soup 😳 nothing like as healthy or full of vegetables as anything I've read so far, but takes mere minutes and is very tasty (in my opinion). It is my go to 'very tired and hungry but too tired to cook ' meal, it's fork food which I love, no effort involved in eating it either, and it's what my DH used to make for me when I was catching a 6am train for a meeting in London and not getting home until 8.30pm.

I like a wholemeal wrap piled with rocket, feta, sundried tomatoes, cucumber, sweet peppers and some kind of ham, maybe Spanish. Some good dressing.

I’m loving this at the moment

Hummus
crispy harissa lamb mince
tomato, cucumber, red onion, parsley and mint, olive oil and lemon juice salad
feta
pomegranate seeds if you have them
scooped up with pitta

takes 15 mins tops and tastes amazing

A proper chicken caesar salad with anchovies, croutons and bacon/ pancetta.

Easy to put together, and delicious.

Butter bean mash with steamed asparagus and a tuna steak cooked in olive oil with capers and garlic and a soft boiled egg - mash at the bottom, everything else piled on top. Grate black pepper and Parmesan on top. Yum! 😋

@Malasana I'm glad I'm not the only one whose idea of quick and delicious doesn't involve 16 different kinds of vegetables, all of which need to be chopped and prepared before 'throwing them in the oven' 😁

Half of what’s been said on here I’ve never bloody heard of.

I was thinking cottage pie. Quick and easy to make and to me seems healthy. I’m sure someone will come along and tell me it’s the food of the devil and I’m killing myself.

My go-to healthy comfort food is

Simmer puy lentils in stock for 30 mins. Drain and add halved baby plum tomatoes, black pepper, chopped coriander & olive oil.
Meanwhile, steam a fresh hake fillet and serve on top

Quick, easy, healthy, delicious. 😋 Only one pan too, because you can put the fish in a steamer over the lentils.

Salmon with homemade pesto, green beans and new potatoes (boiled with a few sprigs of mint if you have any growing). The only slight effort is making the pesto but it's just a bit of chopping or you can use a processor, and then you have pesto for a couple of weeks to put on pasta/chicken/steak etc.

Quick & so tasty but not particularly healthy.

Fry up onions, mushrooms & garlic. Add lardons & simmer in cream. Add to pasta with a bit of cheese.

Dc and I have a new favourite lazy salad. Chicken breast in airfryer (lemon, herbs olive oil and around 10 minutes), crispy bacon (for them, I leave it out), lettuce, avocado, baby tomatoes, some sort of white cheese (truffle burrata was last week's but we've also had baked goat's cheese (in airfryer with chicken) and hallumi), roasted peppers. All laid out in a nice square tray in stripes of alternating colours.
