What’s your favourite low effort but delicious and nutritious meal?

DH is out for dinner tonight and I am envious because I LOVE eating out.

I want to eat something that feels a bit more special but doesn’t take ages to cook. I’m lacking in inspiration and don’t actually know what I want to eat.

What would you have?

So far I have considered chicken souvlaki with pitta and Greek salad, steak tagliata, baked Camembert with veggies and baguette…

Beans on toast! Also has the benefit of being quick & easy to make and tidy up which maximises the time
spent in charge of the remote!

My immediate thought is shakshuka. Easy peasy, healthy, but feels fancy. I put in chunks of halloumi and whatever nice beans I have. Serve with great bread. It’s a treat for my DD10, one of her faves.

Lightly dusted yellowfin sole (M&S and Sainsbury both have it) , jersey royal potatoes and a bag of the fanciest green salad I can buy. (salad washed and ready to eat)

Same. As soon as I see the words "chop an onion" I dismiss it as too much effort

Having said that, I always have frozen chopped onions in the freezer.

I'd go for a really nice omelette or fritatta with fresh herbs, cheese on top. With salad.

Chicken breast wrapped in prosciutto and cream cheese - really easy to do, as you just lay out the prosciutto, spread some cream cheese over it, season, and then wrap around the chicken breast. Drizzle over a bit of olive oil and bake in the oven for 20 - 25 mins. Serve it with whatever you fancy / be arsed to make.
