What’s for dinner?

Morning all,

Sitting here staring at a blank notebook desperately trying to meal plan for this week, however, I’m so sick of trying to come up with something that pleases the majority of the kids and isn’t horrible beige freezer food as I’m sure they would happily live on frozen pizza or nuggets if given the chance (I need veggies at least 5 days a week! 😬).

So, inspiration please! What’s for dinner in your house tonight?

Chicken thigh roast dinner. Chicken, potatoes and vegetables shoved in a big roasting tin, instant gravy, bosh!

Chicken and leek pie with new potatoes for me (sons will have roasties), carrots and cauliflower. Tomorrow is a chicken chow mein..... they eat the vegetables with that lol

We have a lot of lovely leftover Ragu/Bolognese , don't fancy it with pasta again so I might attempt to make them into wraps with a nice salad, but im not sure if all the filling will fall out but will give it a go!

I think either beef in oyster sauce with rice or dan dan chicken noodles (peanut butter and soy sauce).

Harissa chickpeas with a herby yoghurt sauce. I made this recipe once before and it was delicious so I’m really looking forward to it

Wondering this myself! My DD has gone back to uni and I don’t really enjoy cooking and doing it for one especially! Last night I had sushi from Morrisons, the night before baked sweet potato with fried chorizo and onions with a salad. Fortunately when my kids were young they liked most foods and vegetables so not an issue but I hated having to cook every night! How about some one dish meals? Jamie Oliver’s hit ‘n run chicken is great. Google is but I add way more veg, way more balsamic vinegar and about five times the amount of paprika. Serve with rice is delicious and easy peasy.

I'm not going to be much help! I'm having a liver and bacon ready meal because it is pre-postponed and I know what the calories are (I'm on a diet) with cabbage. DH is having a portion of home made liver and bacon casserole out of the freezer. His will be nicer than mine!

Ready meals for me for the next few days, but DD2 is coming to stay on Thursday and we're going to have sausage mash and cabbage with onion gravy (or chips and beans, whatever she prefers), roast beef, roast potatoes, roast parsnips, baked onion, carrots, Yorkshire puddings and another veg, gammon with onion sauce, mash and cabbage (a family favourite), nice burgers in buns with salad and coleslaw, plus chips for those who want them, and chunky fish fingers with green beans for me, and chips and peas for the others. Not all at the same meal, obviously! I'm catering for 5 year old grandson as well and, while he's not really fussy, he's not keen on mixed up, 'saucy' type food, like stews and casseroles, and he didn't like the delicious stir fry I made last time at all!

Good question! I'm trying to clear out the freezer, and am in the middle of defrosting something that when I took it out, couldn't see whether it was either cooked beef or turkey left over from Christmas! Can now see it's beef and will either make a cottage pie or chilli, depending on whether the corner shop has got any spuds and cabbage!

You could roll the wraps like pancakes ,cover with grated cheese and heat in oven. Or even add a cheese sauce on top!

I’m just having filled pasta(Rana roast chicken ravioli) with peas and asparagus and either a creamy pesto sauce or a creamy garlic and herb sauce.

I won’t be much help as it’s football day for us. So it’s an Aldi pizza with wedges and salad. Or if we lose it might be a Chinese to drown our sorrows

Roast beef shoulder, roast potatoes, cauliflower cheese, Yorkshire pudding, carrots, spring greens, gravy.

Tomorrow is leftovers.
Tuesday - pork mince Thai salad
Wednesday - homemade rolls with harrisa slaw and posh fish fingers
Thursday - butter chicken curry with green beans and broccoli
Friday - pasta arrabiata

Roast for us this evening, roast chicken, potatoes, carrots, cabbage, cauliflower cheese, yorkies, peas and gravy.

Was homemade juicy Lucy burgers on Friday
Chicken and chorizo rice with crispy tortilla and cheese topping yesterday.

Cripsy harissa lamb mince on hummus with flatbreads on Monday.

Ramen with leftover roast chicken on Tuesday.

Pork mince lettuce cups on Wednesday

And Cajun cheesy beefy pasta on Thursday.

Lots of mince but all good dinners with lots of veg that the kids like…

Bit of a kids tea for all of us here!

I got some scotch eggs on a good yellow sticker deal yesterday. We all like them, so everyone will get one of those each. I'll do some garlic mini roasties and some veg on the side.

I also usually make a weekly meal plan, but have been thrown off by some family news of a much-loved uncle being put on end of life care. Sadly, we're just waiting for the phone call that he's gone.

Dinners will just be a rustle up whatever I can find in the freezer.

Seared lamb rump, Greek salad, some kind of potatoes, tzatziki, halloumi and flatbreads. Dh also bought a rack of lamb in addition to the rumps because he and ds would eat enough for 320 people between them both!
