What’s for dinner?

I just made this ‘cowboy caviar’ ready to go with our dinner tonight, I’ll be making taco burgers!

what’s everyone else having? I need some more inspo now the weathers getting nicer I can’t keep cooking lasagna and faggots/sausages with mash 🤣

I cooked halloumi flat breads with fries.

We are having roast chicken, Yorkshire's, roast potatoes, veg and gravy. Just back from holiday so we missed a roast. Cat is happy.

I'm here on my own, and had two slices of red velvet cake, and a cappuccino from a sachet, and it was gorgeous. Couldn't be arsed making dinner for one!

On another note, traybakes are my go to, one tray of whatever I'm traybaking, chicken thighs etc. Another tray of sliced/quartered spuds and chunks of veg to roast. That's one easy meal.

Cherries from the freezer heated up. Sugar. Plain yoghurt.

I just made Thai fish cakes with garlic and ginger green beans, baby and tenderstem broccoli and rice noodles.

Creamy paprika chicken with mash potatoes and carrots. It was yummy 🤤

Quick and easy here tonight. Chicken fried rice.

It will be cod, chorizo and butterbean stew. Just need to sling children in to bed first!

I am on my own so am having baked Camembert with pitta bread and I can’t wait 😍

I accidentally bought the worlds stinkiest Camembert and, as much as I love a pungent cheese, it’s making my eyes water every time I open the fridge so have made focaccia and going to bake the focaccia and serve with olives, chili jam, and Serrano ham.

DH wanted a massive Chinese because it’s the start of a bank holiday weekend so he’s sulking

OH has been nurturing a curry sauce since late afternoon so something chicken curry-esk, rice, a couple of sides dug out of the freezer and he’s been muttering about spinach…..

Gammon joint, roast veg, cheese sauce.

So tired. I’m always wiped out at end of working week, I’ve squeezed 38 work hours into 4 days. I will have 2 poached eggs on sourdough with smashed avocado and smoky beans from freezer. DP and DS will have chicken jambalaya from freezer with green salad and brocolli.

Prawn cocktail then Moules mariniere.

Mushroom risotto with tender stem broccoli. It was lovely, but I was saying to DS2 that I feel like I've fallen out of love with cooking so this thread is providing a bit of inspiration.

Me too! I used to love trying new recipes and cooking for the family.. somewhere along the way I’ve become lazy with it!

absolutely loving the sound of these.. I could demolish a baked Camembert now with some crusty bread 😭

We accidentally overdid the cocktails (both have tomorrow off as part of a much-needed four-day weekend!) so our Camembert dinner is running late and we’ve massively overindulged in bread. Ideal evening, to be honest.

So tired today, been a very long week and lots of stress - my DH had to take our son to a&e with a massively swollen knee from playing 5 a side. I was here on my own so had a frozen pepperoni pizza that I doctored with loads of red jalapeños!

We had Cajun rubbed chicken legs, crinkle cut chips, salad and coleslaw.
