I just made this ‘cowboy caviar’ ready to go with our dinner tonight, I’ll be making taco burgers!

what’s everyone else having? I need some more inspo now the weathers getting nicer I can’t keep cooking lasagna and faggots/sausages with mash 🤣

Freezer raid for leftovers so eldest had chicken fajitas, myself and youngest had home made sweet and sour chicken 😁

Homemade King prawn Thai green curry, with Jasmine rice, prawn crackers and veg spring rolls, even my fussy 17 year old , cleared her plate, and asked for more.

DH made a curry from one of the Hairy Bikers cookbook. He doesn’t cook very often so I was happy he wanted to try it. Sadly the chicken was a bit raw but flavour wise it was great, always tastes better when someone else cooks. He was sooo disappointed, really felt sorry for him as we’ve all been there!

Mushroom, ham and cheese omlettes.... do you have to say cheese or does omlette imply cheese already? 🤔 with homade chips and beans!

Probably wholegrain spaghetti, smoked salmon with peas, unfortunately I need DS to make it as I exhausted myself making my lunch. Yes I am that unfit , being bedbound for 3 weeks will do that to you.

Porkchop, baby potatoes, mushrooms and sweetcorn! DH is cooking so he decided what we were having.

We’re having a take away, just to decide which one to go for!

Fish as it's Good Friday.

Chicken Caesar salad with cherry tomatoes and bake-at-home white sourdough loaf with lashings of butter.

The kids surprised me by giving it all a go, I think the smell of the bread helped sell the pile of leaves!

I'm making borscht tonight. I woke up early with a craving. Just hope I can find beetroot in my supermarket- otherwise it's going to be a drive to the farm shop 20 minutes away.

Today I am using up the last of last year's home grown, parboiled and frozen potatoes which have been amazing in the air fryer, with halloumi wraps with mango chutney and a salad.

We had salmon with dill, cherry toms, asparagus, mange tout, baby corn, courgette, spinach, carrots, peas and sweet potato wedges. A spoonful of hollandaise on the side. A glass of wine. I had two small apples later on.

We are in the US and are going to a baseball game tomorrow so decided to do lamb roast tonight as will likely have a Chinese tomorrow after the game. Last night it was chicken wings, salad and garlic bread.

I did not make the borscht last night. I went into town, met a friend unexpectedly and we had a bottle of wine at a pub then DH wanted help with something (also in town) and another friend helped us so we then took him for a beer to say thanks and so it ended up being fish and chips all round.

Today we are having a full Easter lunch at another pub so I doubt the borscht will be made today either.

Creamy garlic prawn and spinach linguine

My in laws are around for tea. I’m making lentil bolognese, garlic bread and a huge salad.

Harvested 5 leeks so had onion, leek, courgettes from the freezer, and carrots from the bottom of the fridge in cheesy sauce mainly made from the cheese given to us by the neighbour when they went back to the uk, with pasta. Love running the freezer down this time of year.

We’re on holiday so it’s pizza and salad and then going out for an evening dog walk with the kids (and ddog obviously!).
