I went out for lunch and I had a vegetarian “mixed grill”. so I won’t be having anything later and I’m very happy that there won’t be any dishes to do. (That’s possibly the best part of eating out)

Roast chicken in the oven 1 and roast beef in oven 2 🤩 all the trimmings! I love cooking a roast and have two growing lads, whatever is left over will make a bubble and squeak tomorrow for lunch.

Tonight we are having takeaway kebabs from the best kebab shop here for my dds birthday dinner, her choice! Then sticky toffee cake for birthday cake pudding 🥳

I've been eating reheated Chinese takeaway, including the rice for over 20 years. It's delicious and no you definitely will not die!

What constituted your veggie mixed grill? I like veggie food but not heard of one of these!

we are having roast beef (I also like meat 😂), cauli cheese, Yorkshires, roast potatoes, roasted beetroot parsnips and carrots, cabbage and tarte tatin for pudding with clotted cream. Dh has just started cooking so it won’t be for a while yet - dd and I are languishing in front of the fire 🔥 after a lovely day.

Roast beef and gammon, roasties, veg, cheese sauce, gravy, yorkies and… dauphinoise potatoes.

Sticky toffee pudding and custard, although this thread has made me wish it was trifle

Tempura cauliflower, onion rings, vegetarian sausages(Vegetable based ones), halloumi, chargrilled corn on the cob, grilled padron peppers and stuffed mushrooms.

I have just realised that I could have probably made this with what I have in. İnstead the spinach is probably going off, but I'm making baked sweet potatoes with cottage cheese.

It's a bit of a bung it dinner, I don't really follow a recipe for it but I'll do my best! Sorry I'm not very good at writing up recipes as I tend to just wing it 🫣

I toss cubed sweet potato (2 medium potatoes for two of us) in a bit of olive oil, salt, pepper and turmeric then roast for 25-30 mins at 180 fan

While that's going I sauté onions until they're soft then mix through tomato purée (about a tbsp), a couple of cloves of minced garlic and a tablespoon of my North Indian spice blend (I get it from Seasoned Pioneers but it's easy enough to mix your own from your spice rack if it's reasonably well stocked!) saute the spices and garlic for 1-2 mins

Then chuck in the liquid, I usually do half coconut milk and half veggie stock (about 180ml of each for two people, roughly, again I eyeball it) and the chickpeas (1 can), bit of salt and pepper if you like.

Let that bubble for as long as it takes to thicken to your desired consistency, 10 mins ish for us. Then dump in a bag of spinach and swirl it until it wilts. Chuck in the sweet potato, finish with a big nob of butter.

I serve it with flatbreads and mango chutney!

I had what I consider to be my lunch at 10.45am as I was working - cheese sandwich, nuts and clementine. Now home crashing out at home and DH is about to start cooking - salmon, new potatoes, green beans, carrots, maybe a few peas.
