What's for tea/dinner/supper/evening meal tonight?

I've been lucky and done well with Chinese food in the supermarkets' reduced sections. So I've got beef in black bean sauce from Morrison's, special fried rice from Waitrose and chilli and coriander noodles from M&S. Not too shabby!

Home made potato, chickpea and spinach curry. Also has some baby sweetcorn and red pepper in it as I'm using things up! We'll have it with brown basmati rice and yogurt and mint raita.

DH and DS are having fajita wraps and chips. I'm eating healthier so having fajita chicken, mushrooms and peppers on a big pile of tenderstem broccoli. I've hoyed some seeds and radishes on and added a bit of cheese and sour cream

I'm on the settee with mine as the fire is on in here. Delicious 😋

Homemade dough, sauce, everything Friday pizzas
Sauce has passata, basil, garlic, sundried tomatoes and white onion
pizzas have feta, jalapenos, fresh mozzarella, red onion, sliced garlic, red pepper, spinach
and for meat eaters, chorizo, parma ham and njuda

pinot, black turtle and kidney beans soaking for the mexican buffet tomorrow

We had Birds Eye quarter pounder Burgers (the ones with onion in ) with McCain oven chips, M&S beer battered onion rings and Tesco baked beans.

Followed by half a Terry's chocolate orange broken into vanilla ice cream for "dessert".

Starting the "run the freezer down to defrost and clear before xmas" phase of the year.

I'm doing pork steaks with onions and apples in cider sauce with a stuffing topping. With boiled potatoes and sweetheart cabbage. Dessert is stewed apples and custard. We have a lot of apples 🍎🍏

Roast beef, roast potatoes, yorkshires and broccoli. Although I’ve cheated and used brisket in a silver tray which you just air fry for 20 mins. I’ve been out all day at netball
so anything for an easy life!

Here you go? Very easy, but delicious.

225g Halloumi
1½ tablespoons honey
1 teaspoon dried chilli flakes
120g extra light cream cheese
Pinch of salt and black pepper
½ teaspoon smoked paprika
1 vegetable stock cube
250g dried pasta

Mix the honey and chilli flakes
Boil the pasta reserving the pasta water
Slice the halloumi and fry in a dry pan until golden
Add the spicy honey and cook until coated
In the same pan, melt the cream cheese, season and add smoked paprika and the crumbled stock cube
Gradually add the pasta water until you have a glossy sauce
Add half the halloumi, stir in the pasta and top with the remaining halloumi

Im so over choosing dinner every night, started meal planning again - which I know is much better but it’s the initial time investment each week -it’s so off putting. I have a sore back atm, so all dishes need to be light on input.
Last night we had Korean BBQ Rice bowl
Tonight we’re having courgette & pea pasta

I get bored with meal planning also.

When that happens I just look online at our local idependent school that lists all their supper menus for the Boarding school and follow that to the letter. Takes the thinking out of the equation.

This week for example;

Monday- pork meatballs in a tomato sauce with pasta; garlic bread and green salad
Tuesday- Chicken kyivs with mashed potato green beans, carrots
Wednesday- build your own jacket potatos
Thursday-homemade tomato soups with toasties (the school does a roast lunch on Thursdays).
Friday- Cod goujon baps with tartare sauce and green salad
Saturday- (post games matches) - build your own fajitas with mexican rice, sour cream, guacamole and trimmings
Sunday- roast of the day.

It takes the planning out of my hands and gives me a break from the mental load for a bit.

As for us- well, DH and I are out for lunch so dinner will be a green soup and sour dough bread. The Dcs are having chicken tempura salad wraps with wedges.
