I've been lucky and done well with Chinese food in the supermarkets' reduced sections. So I've got beef in black bean sauce from Morrison's, special fried rice from Waitrose and chilli and coriander noodles from M&S. Not too shabby!

Spatchcock chicken currently marinading in the fridge in BBQ sauce, southern curly fries and either Caesar salad or mac&cheese depending on whether I can be arsed to go the shops or not…

We have friends coming over for Thanksgiving dinner (🇨🇦). Working Monday so having it today
Turkey & all the trimmings followed by pumpkin & apple pie. I love it,. just like Christmas without the gifts and stress 🦃🦃

So much good food. I've already made tomorrow evening's tuck - a kind of chicken, mushroom and ham lasagne. Sitting in the bottom of the fridge, ready for the oven.

Beef and mushroom stew and dumplings, veg and my special gravy sauce, started in my slow cooker at lunchtime. Might even be some left over for tomorrow!

I found some mince in my freezer so I am making a Bolognese. Wanted to cook something from scratch after eating oven food and pot noodles all week (mad week with work and hospital visiting). But I also didn't want to go to too much effort, so Bolognese was the perfect solution! Got a big block of cheddar too and will generously grate that on to it.

Got no onions, bacon or mushrooms in (mad week = minimal shopping), and these are normally things I put it Bolognese (I know everyone's recipe varies) but it should still be nice - the mince was yellow label and a better grade than I normally buy!

Husband is in charge of dinner tonight, so he’s chosen to cook cheese, onion and potato pie with steak, peppercorn sauce and some corn on the cob. Then a rhubarb crumble with vanilla ice cream.

I’ve currently got Delia’s beef in beer in the oven. It smells great. DH bought proper shin beef from the butchers this morning so it should be fab. Really simple recipe, shin beef, onions, pale ale, thyme, bay leaf and garlic. Also lit the log burner so feeling very autumnal.

We are having chicken in black bean sauce, noodles and veg stir fry
(mange tout, yellow and red pepper, beansprouts, spinach, spring onion, carrot)

Cooked from raw ingredients (apart from the noodles which were from Aldi).

I'm counting calories and tracking what I eat!

Per serving
458 calories, 27g protein,10g fiber, 60g carb cost £1.50

Gammon and pineapple .Not sure if old fashioned nowadays?

We love gammon and pineapple. It's a fave for ds, 20.

I haven't had gammon for months so I must buy it again soon. I'll try cooking a gammon steak in the oven as my grilling attempts aren't always that good. Best of all is a gammon joint bought from the butcher and oven roasted. A bit pricey but goes a long way.
