Recipes with beetroot

Was never keen on it but got into eating beetroot burgers. Any good recipes for other beetroot dishes?. Vegetarian, but share anything. I can adapt them and others may like them.

Peeled then grated into cooked rice, warmed on the hob with a stock cube, chopped fresh dill and lemon juice. Gorgeous with a salad and steak or creamy mushrooms and halumni

Grate beetroot, add a clove of crushed garlic.
season with salt and pepper. Add Greek yogurt to taste. Be careful not to add too much or you end up with tubby custard.

My favourite ever baked potato topping is:
Chopped beetroot (cooked!), feta, spring onion, corriander and walnut oil. It is amazing and alas I can't eat it anymore as I can't eat dairy :(

Also, a variation on that is instead of baked potato add all of the other ingredients to cooked pearl barley.

Beetroot hummus is yum (blend up a cooked beetroot with chickpeas, tahini, lemon juice, salt)

I also just add it raw, grated to salads

Bloody love beetroot!

Sometimes I also chop and bake it with loads of mint sauce all over it then use within salads mmmmmnnmn I really want some beetroot now!

Borscht. Find a proper traditional recipe. It’s delicious. I could eat it every day. Unfortunately, it really does not agree with me (I have digestive issues), so it’s like a twice a year only thing and I just suffer through, but I love it.

Beetroot shakshuka!

Chopped garlic fried in olive oil and rose harissa paste
Grated raw beetroot
Tinned tomatoes
Chickpeas or black beans
Fresh thyme

Simmer on stove for a bit, then 'dent' the middle and crack an egg into it. Simmer till the egg is cooked and then serve with sumac and sea salt sprinkled over

Baked whole in tinfoil with honey olive oil and balsamic vinegar. I also make beetroot burgers - but with the leftover pulp from juicing. Still nice.

Dairy Free Feta is about the only Vegan cheese that is edible IMO

grated raw in the food processor. It comes out in finer ribbons than a grater. Use in salads. Or I roast or bake it and use it in lots of things, but often salad with walnuts and goats cheese.

Roasted rosemary and thyme beetroot with roast potatoes and parsnip. Also pickled beetroot with mint, feta and rocket maybe a bit of water melon.

Roast the beetroot whole with a drizzle of oil, wrapped in tinfoil until tender (just give them a wash. Don't peel or chop off the stubby tops before cooking). Cool a little, peel and cut into wedges. Serve, still warm, with goats cheese, walnuts, nice salad leaves and a balsamic salad dressing.

My SIL made (tiny portions of) beetroot risotto with a little feta cheese crumbled on top. It was tasty.

I keep a jar of sliced beetroot in the fridge and add it to salads or with sauerkraut.

Beetroot and goat cheese tart

Either make pastry that you mix lemon zest and chopped parsley leaves into, or use bought pastry. Blind bake a quiche dish. If using bought pastry, line the bottom of the baked dish with flat leaf parsley leaves.

Halve little beetroot or slice big ones, Dress with oil and sprinkle dukkah over, then bake in the oven for a while - probably about 20 mins, so the blind baking pastry and the beets at the same time.

Mix goat cheese with cream cheese eg Philadelphia and lemon zest (about half and half, so for a big quiche, probably two logs of soft goat cheese and 2/3 pot of Philadelphia. Mix in lemon zest and black pepper.

Fill the quiche base with the cheese mix and arrange the beets on the top.

Mix any leftover beet juice and a little pomegranate molasses or something else sweet eg honey plus a squirt of lemon juice. Use this as a glaze.

Bake again until it seems ready - about 20 mins again.
