I am thinking of doing a roast chicken with all the trimmings. DS1 is revising and it is a favourite of his. Tomorrow I am doing my Sunday standard of lamb pilaf.

Salmon & broccoli quiche, spinach & pine nut pasta salad, some random greenery & tomatoes etc. Possibly garlic bread if I can be bothered.

FeelingLessTired · 12/04/2025 11:57

Oh that sounds really really good.

Salmon, probably with a creamy sauce. Boiled or mashed potatoes and broccoli or cauliflower.

But I like the sound of salmon broccoli quiche as posted by PP, which I could knock up no problem 🤔

Chicken shawarma with shredded lettuce and diced tomatoes and skinny fries. Simple and does the job, Bob !

DilemmaDelilah · 12/04/2025 14:47

Spaghetti with leftover bolognese. Probably. I'm on my own this weekend and not feeling particularly well, so it might just be a bowl of cereal.

Darcy86 · 12/04/2025 14:49

Chicken thigh casserole with mash and tenderstem broccoli on the side. Nice and easy and (at least one of) the kids will eat it too!

OverpricedCupcake · 12/04/2025 14:51

I'm going to treat myself to something from M&S

FeelingLessTired · 12/04/2025 15:13

All lovely ideas. Smile

I vetoed the idea of chicken as DS was not keen in tthe end. So I am doing slow cooked beef short ribs with mashed potatos, braised leeks and honey sesame carrots.

Not had salmon for ages though so that needs to be on the agenda this week i think.

Brie, bacon and cranberry filled bagels with halloumi fries and some salad bits. Kids all want plain pasta and cheese or baked potato.

UsernameTaken76 · 12/04/2025 16:21

We have a chicken roasting in the oven but have covered it in curry paste and serving it with rice and a coconut gravy made with the chicken juices, coconut milk and some more curry paste. It's really easy and requires less faff than a full on roast

DoorOpening · 12/04/2025 17:17

Prawn curry but with sauce from a jar because I’m in an air b&b. At home I’d do it from scratch. Also coconut rice from a packet. I’m starving!! Enjoy your delicious sounding meals, everyone!

AprilBunny · 12/04/2025 17:18

Beef strips done in chipotle, fajitas and salad with salsa and sour cream. It's the Saturday night staple and my favourite meal of the week.
