Stuff I didn't know about restaurants until recently

I am very old, but I only learned this year that hotel buffet scrambled eggs are usually made from powdered egg. That explains why they are a uniform colour. Scrambled eggs made from scratch have yellow and white bits.

On the plus side, I also learned recently that the chicken (or at least the "Original Recipe" pieces) at KFC is made from scratch in the shop every day from fresh chicken pieces, flour, and herbs'n'spices. I had imagined it was all done in a factory somewhere and then cooked from frozen.

What are some other bits of restaurant knowledge that surprised you?

Places I work have pasteurised yolks or white in cartons.
Helps prevent salmonella.

There is no salmonella in British eggs. That's what the Red lion mark proves. Been vaccinated.

Everyothernametaken as far as I know the company I worked for did this as the products are pasteurised so perhaps prevents camplobacter or other food poisoning.
Unless it was because you can buy just yolks for brulée so less wastage.

I as lso worked as chef in the spice factory that supplied KFC.
The workers don't even know the recipe as only part of the mix was made there.
They also supplied crisps and maccy ds spices and flavourings.

Many years ago, I did a temp job at a factory that made pizzas.

I sometimes had to go on the factory floor, & was astonished to see that one of the production line workers had the job of putting a solitary black olive in the middle of each one as it passed.

I hope things have improved since then !

I love that typo of putting the cheery on top, makes it sound like a lovely job sending cheery Bakewell Tarts out to make someone's day! (I do love a Bakewell Tart ☺️)

I worked at a food factory that made pasta based ready meals, my main job was putting a sprig of parsley on a lasagne. It was preferable to the line I had been on previously putting cooked pasta in the tray, its very wet to stop it sticking together so your hands become very dry and start to feel odd due to being wet for such a long time.
