Stuff I didn't know about restaurants until recently

I am very old, but I only learned this year that hotel buffet scrambled eggs are usually made from powdered egg. That explains why they are a uniform colour. Scrambled eggs made from scratch have yellow and white bits.

On the plus side, I also learned recently that the chicken (or at least the "Original Recipe" pieces) at KFC is made from scratch in the shop every day from fresh chicken pieces, flour, and herbs'n'spices. I had imagined it was all done in a factory somewhere and then cooked from frozen.

What are some other bits of restaurant knowledge that surprised you?

James Martin gave one of his master class things on his TV show on how to make poached eggs. He said that one of his jobs when he started working in kitchens was to cook all the poached eggs for the day and put them into iced water and then the fridge and they stay there until needed when they are reheated for a few seconds in boiling water.

He also said on one programme that if you haven't got fresh eggs to forget it.

I’ve worked in several ‘luxury’ nursing homes and the eggs and milk were powdered.

And almost every food item was Tesco Value.

The older people who lived there paid ££££.

I know what you mean, I work as a delivery driver for one of the 'big four' supermarkets, and virtually all care homes I have and do deliver to have the 'basic' or cheapest product, I just hope I don't need one in old-age.

Why not? You commit to a course of action. I don't understand why you are picking this up. Yes, suicide can be used as a verb but it is, more generally, a noun.

Indian restaurants often make raita with mint sauce (the kind you have on a roast dinner) and yoghurt. My sister couldn't believe it but has made it this way ever since and cannot believe tha it tastes just like her favourite restaurants raita.

Liquid eggs are often used for scrambled but rarely powdered. But I have seen boiled egg cylinders used to make sliced egg for sandwiches. It was like 8 inches long and completely uniform, like something out of a sci fi film.

I make raita this way too and half a teaspoon of mango chutney to balance the sourness of the yoghurt

Sorry, perhaps I'm being dense but 'commit' is neutral. Yes, it can be linked to criminal acts but it can also be linked to positive ones, eg, 'We have committed to giving 10% of our profits to X charity'. In its purest form, it simply means 'to do'.

Context is everything.

I actually used 'fine' as I wanted to draw a line under my involvement in this thread. My original purpose was to express sorrow about his death, which seems to have been ignored in the scramble to argue semantics.

Like you, I have no patience with the perpetually offended and will continue to use 'commit' in its correct form.

How bizarrely rude of you.
if you want to talk comprehension of language then maybe we should start at the basics of how people use language.
In this instance , nobody hears the phrase "commit suicide" and thinks, " oh gosh, that person has illegally killed themselves; what a terrible person.!

It's a natural evolution that language changes over time but you obviously lack the ability to recognise this and are continuing to only think of the phrase's meaning from pre 1960's.
That's fine, we can't all be confident with language but to be a good 60 years out is a little odd!

And you are being nowhere near polite; possibly due to having a poor grasp of English

He was an interesting man, although sadly self-destructive. There's a lot of videos of his old programmes on You Tube which I've been catching up on over the last few days, together with interviews from friends and colleagues. Worth a look as you're a fan.

Oh my gawd this was such an interesting thread before it descended into PC nonsense or whatever this is 🤦🏻‍♀️

Best meal I ever had that I’ve ever had and not stumbled across since or attempted recreate but I still think of it- a roasted guinea fowl stuffed with (I think) wild mushroom and hazelnut and some sort of sherry sauce. This was in Alsace, in about 2004.
