What's everyone having for lunch?

Afternoon you lovely lot!

I did this last week and got such a good response and some inspiration for come new lunches. So here we are again.

Whats everyone for, or having for lunch?

I'll go first:

Cream cheese, cucumber and salmon on whole meal farmhouse with salted butter.
Small punnet of strawbs.
Some BBQ pop chips.
Some M&S 'dunker cookies'
Can of Rio.
A bannoffee cheesecake yogurt.

Poached eggs on sourdough, wilted spinach and tomatoes. Ate at 12 but didn't have breakfast.

I had a piece of cod with a cheese and parsley crumb, its chiller cabinet from M&S added a side salad. Off out for a curry with mates tonight.

Mushroom lasagne, leftover, salad, similarly. Pear, Goosnargh biscuit/ cake. Bit local (not to me) so not very well known but so tasty! They're shortbread with caraway seeds.

I had my very first bit of bread for the whole month. God it was so good. A crusty roll (or cob if you are sensibly from the Black Country like me!) with some epic roast beef and horseradish. I thoroughly enjoyed it.

From M&S in the dessert aisle! They're not actually in the yogurt section. They're in the section with the custards and jellies etc. they've very nice!

Mushroom Paneer and spinach curry, takes 5 minutes to prep and its cooking now (for around 20 minutes). I think i have some chapatti in the freezer too
I will probbaly have a san pellegrino (posh Tango) as well and a bit of Tony Chocolony if DH hasn't found where I hid it

DH and I both WFH. Its often lastnight's leftovers, but today I made a pasta.
I'm not even sure if it has a name, or where I got the original recipe from?

-Dried mushrooms (often found in the Lidl Italian week) soaked
-Fresh mushrooms, diced onions and today I also added some peas
-The above gets cooked, then mixed with a large squirt of tomato pasta then whatever creamy thing I have- cream cheese, cream, evaporated milk or a mix. Also some chicken stock for flavour.
-Add cooked pasta, mix and serve.

I missed breakfast today, so for lunch I’m having granola with high protein Greek yoghurt, strawberries, raspberries and raisins.

I needed something quick so made a banana and mixed berry smoothie. I added flaxseed, oats, whey protein and Greek yogurt to it before blending to make it really filling.
