Surprisingly good things in tins...

Hey everyone,

Just thinking about how happy I was to discover tinned 'greek' gigantes beans.
They're delicious and go with loads of stuff, and don't need heating. From the corner shop too so v convenient.

I'd love to know anyone else's favourite foods in tins that require minimum prep. Preferably stuff that's a bit beyond baked beans, tuna, sweetcorn, soup... Ideally available in the UK!

Oh yes the lovely vegetarian pate from H&B and health food stores. Lived on those sandwiches when I had flu a while back and couldn't bear the thought of meals.

Ratatouille isn't bad in a tin and Tescos own brand 'Plant Chef' soups are rather nice and only half the price of branded soups.

Chickpea chaat - even better with the black chickpeas-
boil a potato and dice it
finely chop a red onion
put both in a bowl with your drained chickpeas
bit of lemon juice and tamarind
chaat masala (find in a box in the world foods aisle or in an Indian or Pakistani food store)
coriander
pomegranate seeds
Food of the gods. Dollop yoghurt on a serving and top with Bombay mix.

When i first bought my flat and the interest rate was 15%, i used to live on m&s chilli con carne in a tin mixed with 2 tins of beans....that on baked potato did me for a week, no wonder i was a size 10....

Tinned fruit. I absolutely love it. Mixed grapefruit segments are amazing. Corned beef, use it to make hash when we are running out if money at the end of the month. Anchovies to put on pizza and any brand of five beans. Rice pudding too.

Chickpea curry of various sorts, soups, homemade hummus you can eat in big dollops or in a sandwich.
I've never tried spicing and baking them, keep meaning to try that.

Cauliflower and chickpea curry is delicious. The Bored of Lunch guy has a nice recipe on his Instagram page.

I also use them to make hummus or just add them to salads. They’re also nice roasted.

Turn your anchovies into gentleman’s relish. I make it by taste but similar to this:

Ingredients
8 ounces (2 sticks) butter, room temperature
8 ounces (4 tins) flat anchovies, drained
1/4 teaspoon ground cinnamon
1/4 teaspoon white pepper
1/4 teaspoon cayenne pepper
Dash of fresh grated nutmeg
2 teaspoons fresh lemon juice, plus more to taste

We do curries mainly. Spinach and chickpea, chana masala, potato, chickpea and aubergine balti etc. There's also a Spanish spinach and chickpea dish we do. Oh and tagines/Moroccan stews. You can also roast or fry them in spices for a crispy snack.

Waitrose have a lovely recipe for a butternut squash, sweet potato and chickpea soup we also use tinned chickpeas for.

Anchovies, essential for Salade Niçoise, also great added to a rare roast beef sandwich.

Puy lentils, make an easy salad with spring onions/crushed garlic, chopped tomatoes, peppers (from a jar) stirred through. Or good warmed with some fried onions and bacon cubes as an accompaniment to lamb or pork.

Petits pois, I often drain them, then stir through some mayonnaise or Caesar dressing or vinaigrette as a side to go with cold salmon or chicken.

M&S Vegetable curry in a tin. Chuck in slow cooker with diced chicken, added onion and peppers, really decent curry.

Beansprouts, bamboo shoots and water chestnuts. You'd think they'd be soggy from a tin, but they're nice and crisp.

Just recently discovered these and so handy to add to a stir fry.

I have also recently discovered tinned button mushrooms - ideal to add to curries; stroganoffs and other slow cooked/one pot dinners.
