DH and still really enjoying “Christmas” but I’m quite done with ham, cheese and pigs and blanket flavoured crisps!!!

Fed up of "traditional" food after Christmas and quite a few pub teas (!) so either king prawn stir fry, fajitas or a pasta bake...

tuna, lemon and tarragon gnocchi… quick, simple and utterly delicious. A family favourite for a super easy Friday night meal, and a pleasant and light change from all the excessive eating over Christmas.

Gung Pao pork. Sort of.

Completely non authentic using basmati rice, balsamic vinegar, white wine, mushrooms, green beans, almonds, sesame seeds and defrosted cooked shoulder of pork. Those are what I’ve got in.
Yes to garlic, ginger, chili pepper, white pepper, 5 spices and soy sauce.
I don’t like making cornstarch thickener so it will be a bit more watery, but plenty tasty.

Making a chicken casserole from the Good Food app with some smashed jacket potatoes, also from the good food app. We are very much off of decadent creamy food right now after the OTT-ness of Christmas , so it's simple dinners at the moment accompanied with lots of veg! Need to get back to some kind of normal eating!

Black bean and corn quesadillas, salsa and yoghurt (sorry there is a bit of cheese in there but it's just there for glue to hold the quesadillas together)

Last night was pan-fried salmon, purple-sprouting broccoli and a pouch of mediterranean grains, and a dollop of chili crisp on the side

Tomorrow night is sausage and lentil hotpot

Portuguese rice, copy of the one I tried in Portland for brunch. A pouch of Mexican flavour rice, few bacon lardons and chorizo, fried with small chopped pepper and onion, break an egg into it, stir and serve in bowls with sliced avocado on top. Takes less than 15 mins and full of flavour, one pot cooking. I will serve with tomato’s in sour cream salad to cool off the spice.

Liguine with prawns, tomatoes and spinach and some garlic bread tonight. Cottage pie tomorrow and I'll make some macaroni cheese when I get a sec for the freezer to use up some of the Christmas cheese. (WHY do I always buy so much cheese????)

Last night we had pulled pork and black bean quesadillas with salad.
Tonight we are having homemade Singapore prawn noodles.
Tomorrow is Hairy bikers chicken and chorizo tray bake.

Need to meal plan for the week and sort out a food order for Monday morning after the schools go back.

Salmon poached with butter lemon juice dill white wine and cherry tomatoes, served with air fried potato wedges, broccoli, green beans carrots and courgettes. Washed down with a bottle of Christmas cava. Followed by mince pies.

Homemade chicken katsu curry with brown rice and pickled cucumbers from my new cookbook I got for Christmas.

I’ve prepped it at lunch so just have to do the cooking bit when I finish work.

Have pre-roasted some extra veg and blended it roughly to make roasted vegetable 'sausage' rolls for tomorrow's lunch too.

Quiche or left over chicken curry, we'll have to draw straws as only 1 portion left. I have half eaten bits of nice cheese that a guest brought and a pastry roll in the fridge that won't last forever.

I'm also batch cooking about 8 or 9 portions of mince into Shepherds pie mix to freeze for those busy January evenings.
