What’a for dinner this weekend?

I’m feeling uninspired. Please give me your dinners for tonight (Sat) and tomorrow (Sun).

At the moment, weekends, I’m cycling through either beef or chicken pot roasts. Tasty, but becoming repetitive.

We’re having fish burgers with oven chips tonight - easy freezer tea as we’re doing the decorations. Tomorrow I’m making butter bean stew with roasted tomatoes and harissa which we’ll have with flatbreads.

I've just marinated some chicken for later

I cut up some chicken breasts into chunks

And added the following

Soy sauce
Honey
Chinese 5 spice
Garlic powder
Garlic purée
White wine vinegar

It's in the fridge till we get hungry later

I'll add it ti a stir fry with some rice noodles, broccoli, onions and red pepper

I might add some oyster sauce if I feel like it

I didn't have to marinate it I could have just added it whilst cooking

Stir fry tonight. Have some marinated chicken, stir fry veg and noodles with some sauce.
Tomorrow will be beef potato and spinach Rogan Josh.
Homemade squash soup for lunches.

We are having slow roast pork belly,mash and kale as we were having family to stay but they sensibly cancelled because of the weather so we have a very large joint to use .
We will eat it tonight and I will do pulled pork with the rest of it and freeze it for over Christmas to have in rolls with stuffing,apple sauce and gravy !
Tomorrow we are out for brunch with dd1&3 in town then nachos for dinner

Just put a sausage casserole in the slow cooker which will be served later with peas and mashed potato.

Tomorrow I think is breaded fish - was meant to be last night but we were out late.

Tonight I'm making BBC Good Food spiced vegetable biryani which is a wonder-recipe as everything cooks in the same roasting tin and it's vegan, delicious and healthy.

Tomorrow it will be a mini roast of whole breast chicken kievs, roast potatoes, roast parsnips, red cabbage and green beans and probably peas too. Mini because just DH and I here so we wouldn't do a whole chicken or whole joint.

It's 15min prep and you can enjoy drinks while it is getting ready.
Just some warm store bought and baked bread.

Homemade smash burgers today as everyone loves them.

Tonight is fajita chicken using one of the maggi spice mixes with sweet potato fries and corn on the cob.

Tomorrow is slow cooker gochujang beef short ribs with sticky rice, pak choi and tenderstem broccoli.

Venison burgers (currently half-price in Waitrose) with new potatoes and steamed veg and a bit of redcurrant jelly sauce.

Tomorrow probably roast chicken or DH was muttering something about making a beef stew.

We usually eat veggie but I'm getting over illness and craving meat and two veg.

Roast dinner tonight - Quorn roast with trimmings. Trying my fave smashed potatoes to see if they taste good as a side for Christmas dinner.

Not sure about tomorrow - maybe some kind of pie.

Quick dinner tonight DH is at work then out on a Christmas thing this evening, so seabass, roasted new potatoes, green beans and tenderstem, will chuck some pesto in with the potatoes towards the end of cooking and squeeze some lemon over the fish.

Tomorrow leg of lamb, roast root veg, shredded charred sprouts, and boulangere potatoes. The left over lamb will become a lamb saag on Monday (which to be honest is my main motivation for the roast)

Dirty fries tonight which is actually mince (hidden veg), oven chips and melty cheese with a side salad. The kids "don't like" mince but like dirty fries 😂
Tomorrow will be low key roast, probably pork, with roast potatoes and veggies.

No idea as I am home alone with flu 🤧 I should have been making the most of some time to myself, enjoying a lovely Christmassy weekend and out to dinner with friends so the fridge is fairly empty.

Maybe homemade chicken soup or ramen if I can find the energy to get off the sofa.

I have even less inspiration for tomorrow. I am staring at my Ocado trolley trying to think of things that are quick and easy to cook that won’t taste like cardboard.

Chilli for tea tonight with guacamole, cheese, salsa and rice. Went to the fancy bakery down the road from us for a nice cake each but we couldn't resist and ate them after lunch instead of after dinner as originally planned!

Then tomorrow we are out at a kids Christmas party all afternoon. There will be a little buffet I think, but no doubt we'll still all be hungry after the party so we'll probably get a McDonald's on the way home.

Family pizza night for us tonight. It’s our favourite night of the week: plenty of pepperoni pizza, fried chicken & beers for us / fizzy drinks for the kids in front of a film.

Tomorrow we’re at my parents’ for a roast. Had we not planned that, it would have been keralan chicken curry (homemade) with naan, rice & sides!

Tuna and sweetcorn pasta bake tonight, maybe some garlic bread if I venture out to get some and tomorrow we’re having a chicken and gammon pie using up leftovers from the freezer.
